Ingredients
For the lemon mousse
- ž cup (180 ml) heavy whipping cream, cold

- ½ tsp vanilla extract
- Pinch of salt

Instructions
1. Prepare the lemon
Wash and dry the lemon thoroughly.
Finely grate the yellow outer skin to make the lemon zest. Avoid grating too deeply into the white part because the pith can taste bitter.
Then squeeze the lemon to get 2 tablespoons of fresh juice.
Fresh lemon juice makes a noticeable difference in this dessert, so bottled juice isn’t recommended if you can avoid it.
2. Whip the cream
Pour the cold heavy cream into a chilled mixing bowl.
Beat with an electric mixer on medium-high speed until soft peaks form.

6. Taste and adjust

7. Chill
