Ingredients
For the beef
- 1 lb (450 g) lean ground beef
- 1 tsp olive oil, if needed
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp yellow mustard
- 1 tbsp ketchup
For the bowls
- 6 cups chopped romaine or iceberg lettuce
- 1 cup shredded cheddar cheese
- ½ cup diced dill pickles
- ½ cup finely diced onion
- 1 large tomato, diced
- ½ cup cooked brown rice, quinoa, or cauliflower rice per serving, optional
- 1 tbsp sesame seeds, optional
Big Mac-style sauce
- ½ cup plain Greek yogurt
- 2 tbsp mayonnaise
- 1½ tbsp yellow mustard
- 1 tbsp ketchup
- 2 tbsp finely chopped dill pickles
- 1 tsp pickle juice
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp paprika
- Black pepper, to taste
Instructions
1. Make the special sauce
Add the Greek yogurt, mayonnaise, mustard, ketchup, chopped pickles, pickle juice, garlic powder, onion powder, and paprika to a small bowl.
Stir until completely combined.
Taste and adjust the mustard, pickle juice, or seasoning to your preference.
Cover and refrigerate while you prepare the beef.
2. Prepare the beef
Heat a large skillet over medium-high heat.
Add the ground beef.
Cook for approximately 6–8 minutes, breaking it apart with a wooden spoon or spatula as it cooks.
Continue until browned and cooked through.
3. Season the beef
Drain excess grease if necessary.
Reduce the heat to medium.
Add the garlic powder, onion powder, smoked paprika, salt, and black pepper.
Stir in the mustard and ketchup.
Cook for another 1–2 minutes, stirring until the seasoning coats the beef.
Remove from the heat.
4. Prepare the vegetables
While the beef cooks, chop the lettuce, tomato, onion, and pickles.
For the most authentic Big Mac-style texture, dice the onion and pickles quite finely.
Keep the lettuce cold and crisp.
Assemble the Bowls
5. Build the base
Divide the chopped lettuce among four bowls.
If you’re using rice, quinoa, or cauliflower rice, add it over or underneath the lettuce.
6. Add the beef
Divide the warm seasoned beef between the bowls.
7. Add the toppings
Top each bowl with:
- Shredded cheddar
- Diced pickles
- Diced onion
- Tomato
Sprinkle with sesame seeds if desired.
8. Add the sauce
Drizzle generously with the Big Mac-style sauce.
Alternatively, serve the sauce on the side so everyone can control the amount.

Extra-Cheesy Version
For a stronger cheeseburger flavor, add ½ cup shredded cheddar directly to the hot beef after turning off the heat.
Cover the skillet for 1–2 minutes.
The residual heat will melt the cheese into the beef.

Skip the rice and use:
