Berry Coconut Frozen Ice Cream

A creamy, tropical homemade frozen dessert packed with bright berries and coconut. This version has a smooth ice-cream texture, a beautiful berry swirl, and plenty of coconut flavor. You can make it with or without an ice-cream machine.Servings: 8

Ingredients

For the berry sauce

  • 2 cups (300 g) mixed berries — strawberries, blueberries, raspberries, or blackberries
  • ⅓ cup (65 g) granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon water
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water

For the coconut ice cream

  • 1 can (13.5 oz / 400 ml) full-fat coconut milk
  • 1 cup (240 ml) heavy whipping cream
  • ¾ cup (150 g) granulated sugar
  • ½ cup (120 ml) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon coconut extract, optional
  • ¼ teaspoon salt
  • ¾ cup (60 g) sweetened or unsweetened shredded coconut

For the berry swirl

  • ½ cup of the cooled berry sauce
  • ½ cup fresh berries, chopped

Optional toppings

  • Toasted coconut flakes
  • Fresh berries
  • White chocolate shavings
  • Chopped almonds
  • Extra berry sauce

1. Make the berry sauce

Place the berries, sugar, lemon juice, vanilla, and water in a saucepan.

Cook over medium heat for about 6–8 minutes, stirring occasionally.

The berries will soften and release their juices.

Use the back of a spoon to gently crush some of the berries while leaving a few pieces intact.

Stir in the cornstarch slurry.

Cook for another 1–2 minutes, stirring constantly, until the mixture thickens slightly.

Remove from the heat.

The finished sauce should be thick enough to coat a spoon but still pour easily.

Transfer it to a bowl and let it cool completely.

For a smoother sauce, strain it through a fine-mesh sieve to remove the raspberry or blackberry seeds.

2. Toast the coconut

Place the shredded coconut in a dry skillet over medium-low heat.

Toast for 3–5 minutes, stirring frequently.

Once it becomes lightly golden and fragrant, immediately transfer it to a plate.

Don’t leave it in the hot skillet because it can continue cooking and burn.

Let it cool.

Toasted coconut gives the ice cream a much deeper flavor than raw coconut.

3. Make the coconut base

Pour the coconut milk, heavy cream, condensed milk, sugar, vanilla, coconut extract, and salt into a large bowl.

Whisk thoroughly until the sugar is mostly dissolved.

If your coconut milk has separated in the can, shake it well or whisk it separately before adding it.

Add about ½ cup of the toasted coconut.

Stir well.

4. Chill the mixture

Cover the coconut mixture and refrigerate for at least 2 hours.

For the creamiest ice cream, chill it until it is thoroughly cold.

You can also prepare the base the night before.

5. Using an ice-cream machine

Pour the chilled coconut mixture into your ice-cream maker.

Churn according to the manufacturer’s instructions, usually around 20–30 minutes.

When the ice cream becomes thick and soft-serve-like, add the chopped fresh berries.

Churn for another minute or two, just until distributed.

Don’t overmix.

6. Create the berry swirl

Transfer about one-third of the ice cream into a freezer-safe loaf pan or container.

Drizzle several spoonfuls of cooled berry sauce over it.

Add another layer of ice cream.

Add more berry sauce.

Repeat with the remaining ice cream and sauce.

Use a butter knife or skewer to gently make a few large swirling motions through the ice cream.

Don’t stir it completely.

You want distinct ribbons of berry sauce running through the coconut ice cream.

Sprinkle the remaining toasted coconut over the top.

7. Freeze

Cover tightly and freeze for at least 4–6 hours, preferably overnight.

For the best texture, allow the ice cream to sit at room temperature for 5–10 minutes before scooping.

No ice-cream machine method

You can make this without a machine.

After chilling the coconut mixture, pour it into a shallow freezer-safe container.

Freeze for about 45 minutes.

Remove it and vigorously whisk or beat the mixture to break up ice crystals.

Return it to the freezer.

Repeat every 30–45 minutes for about 3 hours.

Once the mixture becomes thick and creamy, fold in the chopped berries and create the berry swirl with the cooled sauce.

Freeze until firm.

This method takes more effort but produces a surprisingly creamy result.

For an extra-creamy texture

For a particularly rich ice cream, use:

  • Full-fat coconut milk rather than light coconut milk
  • Heavy cream rather than half-and-half
  • Sweetened condensed milk for additional milk solids and sweetness
  • A little alcohol-free vanilla extract for flavor

The condensed milk also helps keep the finished ice cream softer after freezing.

Fresh Berry Ripple

For a more intense berry flavor, make a second, chunkier topping.

Combine:

  • 1 cup chopped strawberries
  • ½ cup blueberries
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice

Let the mixture sit for 15 minutes.

Mash approximately half of the berries with a fork while keeping the rest chunky.

Drain off some excess liquid.

Fold the berries into the ice cream just before freezing, then add the cooked berry sauce as the main swirl.

This gives you two different berry textures: smooth ribbons of sauce and little pieces of juicy fruit.

Coconut Crunch Topping

For a crunchy topping, combine:

  • ½ cup shredded coconut
  • ¼ cup sliced almonds
  • 1 tablespoon brown sugar
  • 1 tablespoon melted butter

Spread on a baking sheet and bake at 350°F (175°C) for about 7–10 minutes, stirring once.

Cool completely before sprinkling over the finished ice cream.

Flavor variations

Strawberry Coconut

Use strawberries as the primary berry and add a little extra lemon juice.

Raspberry Coconut

Use raspberries and add a tablespoon of raspberry jam to the berry sauce for a deeper flavor.

Blueberry Coconut

Use blueberries with lemon zest and a pinch of cinnamon.

Triple Berry Coconut

Use equal amounts of strawberries, raspberries, and blueberries.

Berry Coconut White Chocolate

Fold in ½ cup finely chopped white chocolate during the final minute of churning.

Tropical Berry Coconut

Add ½ cup finely diced mango and a little lime zest.

How to serve it

For the prettiest presentation, scoop the ice cream into chilled bowls.

Top with:

  • Fresh berries
  • Toasted coconut
  • A drizzle of berry sauce
  • Coconut flakes
  • White chocolate shavings

For a dessert-shop presentation, serve two scoops with a spoonful of warm berry sauce underneath and toasted coconut sprinkled around the edges.

The combination of cold creamy coconut, tart berries, sweet berry ribbons, and toasted coconut crunch makes this especially good on a hot day.
