Ingredients

For the beef filling

  • 1 lb (450 g) lean ground beef
  • 1 tablespoon olive oil
  • ½ medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon onion powder
  • ¼ teaspoon chili flakes, optional
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon tomato paste
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons water

For the pastry

  • 2 sheets frozen puff pastry, thawed but still cold
  • 1½ cups (150 g) shredded sharp cheddar cheese
  • ½ cup (50 g) shredded mozzarella
  • 1 large egg
  • 1 tablespoon water
  • 1 teaspoon sesame seeds, optional
  • 1 teaspoon poppy seeds, optional
  • ½ teaspoon dried parsley or Italian seasoning

Optional dipping sauce

  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 1 tablespoon sweet chili sauce
  • ½ teaspoon smoked paprika
  • Pinch of salt

1. Prepare the beef

Heat the olive oil in a large skillet over medium-high heat.

Add the diced onion and cook for about 3–4 minutes, until softened.

Add the minced garlic and cook for another 30 seconds.

Add the ground beef.

Break it apart with a wooden spoon and cook for 6–8 minutes, until browned and no longer pink.

Drain excess fat if necessary.

2. Season the filling

Add the paprika, smoked paprika, oregano, onion powder, chili flakes, salt, and black pepper.

Stir well.

Add the tomato paste, ketchup, Worcestershire sauce, and water.

Cook for another 2–3 minutes, stirring frequently.

The beef should become thick and almost paste-like rather than wet.

This is important because excess moisture can make the puff pastry soggy.

Remove from the heat and let the beef cool completely.

Important

Don’t put hot beef onto the puff pastry.

Warm filling will soften the butter in the pastry and make the twists difficult to handle.

For an especially crisp result, spread the cooked beef onto a plate or baking sheet so it cools quickly.


3. Prepare the pastry

Preheat the oven to 400°F (200°C).

Line two baking sheets with parchment paper.

Place one sheet of puff pastry on a lightly floured work surface.

If it’s very thick, gently roll it into a rectangle approximately 10 × 14 inches (25 × 35 cm).

Keep the second sheet refrigerated until you’re ready to use it.

4. Add the cheese

Sprinkle half of the cheddar evenly over the pastry.

Add half of the mozzarella.

Leave a small border around the edges.

Spread half of the cooled beef mixture evenly over the cheese.

Don’t make the beef layer too thick.

A thin, even layer makes the pastry easier to twist and allows the pastry to become properly crisp.

5. Add the second pastry sheet

Place the second sheet of puff pastry directly over the filling.

Gently press down across the surface to compact the layers.

Don’t press so hard that you flatten the pastry.

Use a rolling pin to lightly roll over the surface once or twice. This helps the layers adhere to one another.

6. Cut the twists

Using a sharp knife or pizza cutter, cut the pastry into strips about ¾–1 inch (2–2.5 cm) wide.

You should get approximately 18–24 strips depending on the size.

Pick up each strip carefully.

Twist it several times to create a spiral.

Place it on the prepared baking sheet with about 1½ inches (4 cm) between each twist.

If some filling falls out, simply press it gently back into place.

7. Chill the twists

Place the entire baking sheet in the refrigerator for 15–20 minutes.

This step makes a noticeable difference.

Cold puff pastry puffs more dramatically in the oven because the butter remains solid until the pastry hits the heat.

8. Make the egg wash

Beat the egg with 1 tablespoon of water.

Brush the tops of the chilled twists lightly with the egg wash.

Don’t soak the pastry with egg wash—too much can prevent the layers from rising properly.

Sprinkle with sesame seeds, poppy seeds, or dried herbs if desired.

For a cheesy crust, add a small amount of extra Parmesan over the top.

9. Bake

Bake for 20–25 minutes, rotating the tray halfway through.

The twists should be:

  • Deep golden brown
  • Puffy
  • Crisp around the edges
  • Fully cooked underneath
  • Clearly layered

If they need additional color, bake for another 3–5 minutes.

Watch them carefully toward the end because the cheese can brown quickly.

10. Cool slightly

Allow the twists to cool on the baking sheet for about 5 minutes.

Then transfer them to a wire rack.

This prevents steam from collecting underneath and making the bottoms soft.

Serve warm or at room temperature.

Creamy Dipping Sauce

Combine the mayonnaise, ketchup, mustard, sweet chili sauce, smoked paprika, and salt.

Stir until completely smooth.

Refrigerate for 15–20 minutes before serving if possible.

The creamy, slightly spicy sauce pairs particularly well with the crispy pastry and savory beef.

Make Them Extra Crispy

For exceptionally crisp twists:

  • Keep the puff pastry cold throughout preparation.
  • Make sure the beef filling is completely cool.
  • Don’t overfill the pastry.
  • Chill the assembled twists before baking.
  • Use a preheated oven.
  • Bake directly on parchment rather than a deep baking dish.
  • Let the finished twists cool briefly on a wire rack.

Add More Cheese

For a particularly cheesy version, use:

  • 1 cup cheddar
  • ½ cup mozzarella
  • ¼ cup Parmesan

Mix the cheddar and mozzarella into the filling layers and sprinkle Parmesan over the egg wash.

The Parmesan creates an especially savory, crispy crust.

Spicy Beef & Cheese Twists

For a hotter version, add:

  • 1 finely chopped jalapeño to the beef
  • ½ teaspoon cayenne
  • ½ teaspoon chili flakes
  • Pepper Jack instead of mozzarella

You can also drizzle the finished twists with hot honey for a sweet-spicy finish.

Cheeseburger-Style Twists

Turn these into a cheeseburger-inspired version by adding:

  • 2 tablespoons finely chopped pickles
  • 1 tablespoon yellow mustard
  • 2 tablespoons ketchup
  • Extra cheddar
  • ½ teaspoon garlic powder

Serve with burger sauce for dipping.

Pizza Beef Twists

Replace the ketchup and Worcestershire sauce with:

  • 3 tablespoons pizza sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder

Use mozzarella and Parmesan instead of cheddar.

Add a little pepperoni if desired.

Storage

Store cooled twists in an airtight container in the refrigerator for up to 3 days.

For the best texture, reheat them rather than eating them cold.

Oven

Heat at 375°F (190°C) for about 7–10 minutes.

Air fryer

Heat at 350°F (175°C) for about 3–5 minutes.

The air fryer is particularly good for restoring the crisp pastry.

Freezing

You can freeze the assembled, unbaked twists.

Arrange them on a parchment-lined tray and freeze until firm.

Transfer them to a freezer-safe container or bag.

When ready to bake, place them directly onto a lined baking sheet while still frozen.

Brush with egg wash immediately before baking and add approximately 5–10 extra minutes to the baking time.

Don’t thaw them completely before baking, as the pastry can become soft.
