Air-Fried Crispy Cauliflower

Ingredients
- 1 large head cauliflower, cut into bite-sized florets
- 2 tablespoons olive oil
- ½ cup grated Parmesan cheese
- ¼ cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon onion powder
- ½ teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon chili flakes, optional
Optional finishing ingredients
- 1 tablespoon fresh parsley, chopped
- 1–2 tablespoons grated Parmesan
- Fresh lemon juice
- Flaky sea salt
1. Prepare the cauliflower
Wash the cauliflower and dry it very thoroughly.
Cut it into evenly sized florets.
Excess moisture can prevent the cauliflower from becoming crispy, so pat it dry with a clean kitchen towel or paper towels.
2. Make the crispy coating
In a large bowl, combine:
- Parmesan
- Panko
- Garlic powder
- Smoked paprika
- Onion powder
- Italian seasoning
- Salt
- Black pepper
- Chili flakes, if using
Mix well.
3. Season the cauliflower
Place the dry cauliflower florets in another large bowl.
Drizzle with olive oil.
Toss thoroughly so every piece gets a light coating.
Add the Parmesan-panko mixture.
Toss again until the cauliflower is evenly coated.
Don’t worry if some of the coating doesn’t stick perfectly—it will become crispy in the air fryer.
4. Preheat the air fryer
Preheat your air fryer to 400°F (200°C) for about 3 minutes, if your model requires preheating.
5. Air fry
Arrange the cauliflower in the basket in a single layer.
Avoid overcrowding.
Air fry at 400°F (200°C) for 8 minutes.
Shake the basket or turn the cauliflower.
Continue cooking for another 6–10 minutes, until deeply golden and crisp.
For particularly large florets, you may need a few additional minutes.
6. Finish
Transfer the crispy cauliflower to a serving bowl.
Sprinkle with fresh parsley and a little Parmesan.
Finish with a squeeze of lemon juice.
Serve immediately.
Extra-Crispy Version
For maximum crunch:
- Dry the cauliflower extremely well.
- Don’t overcrowd the air fryer.
- Use panko rather than regular breadcrumbs.
- Spray the coated florets lightly with olive oil before cooking.
- Shake the basket halfway through.
- Cook in batches if necessary.
The more space around the florets, the better the hot air can circulate.
Buffalo Crispy Cauliflower
After air frying, toss the cauliflower with:
- ¼ cup buffalo sauce
- 1 tablespoon melted butter
Return to the air fryer for 2–3 minutes.
Serve with ranch or blue cheese dressing.
Garlic Parmesan Cauliflower
Skip the smoked paprika and chili flakes.
Increase the Parmesan to ¾ cup.
After cooking, toss with:
- 1 tablespoon melted butter
- 1 minced garlic clove
- 1 tablespoon fresh parsley
Finish with additional Parmesan.
Spicy Crispy Cauliflower
Add:
- ½ teaspoon cayenne
- ½ teaspoon chili powder
- ½ teaspoon smoked paprika
Serve with a cool yogurt or ranch-style dipping sauce.
Low-Carb / Keto Version
Simply leave out the panko.
Increase the Parmesan to ¾ cup and add:
- 1 tablespoon almond flour
- ½ teaspoon garlic powder
- ½ teaspoon paprika
Coat the cauliflower and air fry as directed.
The Parmesan creates a wonderfully crisp crust without traditional breadcrumbs.
Honey Garlic Version
Air fry the cauliflower until crisp.
Mix:
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 minced garlic clove
- ½ teaspoon sriracha
Toss the cooked cauliflower with the sauce.
Return it to the air fryer for 2 minutes.
