Cucumber Tea Sandwiches
These classic cucumber tea sandwiches are light, creamy, and refreshing, making them perfect for afternoon tea, brunches, showers, parties, or a simple snack. The key is to remove excess moisture from the cucumber so the bread stays soft but doesn’t become soggy.
Ingredients
- 1 large English cucumber
- 8 slices soft white or whole-wheat sandwich bread
- 4 oz cream cheese, softened
- 2 tablespoons mayonnaise
- 1 tablespoon fresh dill, finely chopped
- 1 teaspoon lemon juice
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- 1 tablespoon butter, softened
Instructions
- Prepare the cucumber: Wash the cucumber and slice it very thinly. You can leave the peel on for extra color, or partially peel it if preferred.
- Remove excess moisture: Arrange the cucumber slices on paper towels. Lightly sprinkle them with a small amount of salt and let them sit for about 10 minutes. Pat them thoroughly dry with additional paper towels. This helps prevent soggy sandwiches.
- Make the spread: In a bowl, combine the softened cream cheese, mayonnaise, dill, lemon juice, garlic powder, salt, and black pepper. Mix until smooth and creamy.
- Prepare the bread: Spread a very thin layer of butter over one side of each slice of bread. The butter creates a moisture barrier and helps keep the bread from becoming soggy.
- Add the cream cheese mixture: Spread the cream cheese mixture evenly over the buttered side of the bread.
- Layer the cucumber: Arrange the cucumber slices in a single, slightly overlapping layer over half of the bread slices. Avoid adding too many slices, which can make the sandwiches difficult to eat.
- Close the sandwiches: Place the remaining bread slices on top, spread-side down, and gently press them together.
- Trim and cut: For traditional tea sandwiches, carefully remove the crusts with a sharp knife. Cut each sandwich into 2 triangles or 3–4 small rectangles.
- Chill before serving: Place the sandwiches on a plate, cover loosely, and refrigerate for about 20–30 minutes before serving. This helps them hold their shape.
