Cheesy Beef Taco Pockets
These Cheesy Beef Taco Pockets are crispy on the outside, juicy and cheesy on the inside, and packed with flavorful seasoned ground beef. They’re an easy handheld meal that combines the best parts of tacos and baked pastry pockets. Serve them for dinner, game day, lunch, or as a fun party appetizer.
Ingredients
For the beef filling
- 1 lb (450 g) ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1½ tablespoons taco seasoning
- ½ teaspoon smoked paprika
- ½ teaspoon ground cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons tomato paste
- ¼ cup (60 ml) water
- 1 cup (100 g) shredded cheddar cheese
- ½ cup (50 g) shredded Monterey Jack or mozzarella cheese
- 2 tablespoons chopped fresh cilantro, optional
For the pockets
- 1 package refrigerated crescent dough or pizza dough
- 1 egg
- 1 tablespoon water
- ½ cup shredded cheddar cheese, for topping
- 1 tablespoon sesame seeds, optional
- 1 tablespoon chopped cilantro, optional

Instructions
- Preheat the oven.
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper. - Cook the onion.
Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3–4 minutes, until softened. - Brown the beef.
Add the ground beef and cook for approximately 6–8 minutes, breaking it apart with a wooden spoon until browned and cooked through. - Season the filling.
Add the garlic, taco seasoning, smoked paprika, cumin, salt, and black pepper. Stir well and cook for another minute. - Add tomato paste.
Stir in the tomato paste and water. Cook for 2–3 minutes, stirring occasionally, until the mixture becomes thick and flavorful. - Cool the filling.
Remove the skillet from the heat and let the beef cool for about 10 minutes.Cooling the filling is important because very hot beef can make the dough soft and difficult to work with.
- Add the cheese.
Stir the shredded cheddar, Monterey Jack or mozzarella, and cilantro into the cooled beef mixture.
Assemble the Taco Pockets
- Prepare the dough.
Unroll the crescent dough or pizza dough on a lightly floured surface. If using crescent dough, separate it into individual pieces and gently flatten them into larger squares or rectangles. - Add the filling.
Place approximately 2–3 tablespoons of the beef mixture in the center of each piece of dough.Avoid overfilling—the pockets need enough room to seal properly.
- Fold the pockets.
Fold the dough over the filling to form a rectangle or triangle. Press the edges firmly together with your fingers. - Seal with a fork.
Crimp the edges with the tines of a fork to create a secure seal and a decorative finish. - Prepare the egg wash.
Whisk together the egg and water. Brush the tops of the pockets lightly with the egg wash. - Add cheese.
Sprinkle the tops with additional shredded cheddar. Add sesame seeds or a little chopped cilantro if desired. - Bake.
Place the pockets on the prepared baking sheet and bake for 15–20 minutes, or until puffed and deeply golden brown. - Cool slightly.
Allow the pockets to rest for 5 minutes before serving. The filling will be very hot immediately after baking.
Tips for Perfect Taco Pockets
- Drain excess grease from the beef before adding the seasonings so the pockets don’t become greasy.
- Let the filling cool before assembling.
- Don’t overfill the dough, even if you’re tempted to add more cheese.
- Press the edges firmly and crimp them with a fork to prevent the filling from escaping.
- For an extra-crispy crust, brush the dough generously with egg wash.
- Freshly shredded cheese generally melts more smoothly than pre-shredded cheese.
- Add chopped jalapeños to the beef for a spicy kick.
Delicious Variations
Chicken Taco Pockets:
Replace the ground beef with shredded cooked chicken and add a little extra cheese.
Beef & Bean:
Add ½ cup refried beans or drained black beans to the beef mixture.
Spicy Jalapeño:
Add diced jalapeños, pepper jack cheese, and a pinch of cayenne.
Breakfast Taco Pockets:
Replace some of the beef with scrambled eggs and add breakfast sausage, cheddar, and diced peppers.
Loaded Nacho Pockets:
Add black beans, corn, jalapeños, and extra cheddar to the filling.
Air Fryer Method
You can also make these in an air fryer.
- Preheat the air fryer to 375°F (190°C).
- Arrange the pockets in a single layer.
- Lightly spray the tops with cooking spray.
- Air fry for 8–12 minutes, until golden brown and crisp.
Cook in batches if necessary so the pockets have enough room for the hot air to circulate.
Make Ahead
Prepare and seal the taco pockets up to 24 hours ahead. Place them on a parchment-lined tray, cover, and refrigerate.
Brush with egg wash and bake when ready.
You can also freeze unbaked pockets. Freeze them in a single layer, then transfer them to a freezer-safe bag. Bake directly from frozen, adding approximately 5–8 minutes to the baking time.
Storage
Store leftover pockets in an airtight container in the refrigerator for up to 3 days.
Reheat in a 375°F (190°C) oven or air fryer for several minutes until hot and crisp. The microwave works for quick reheating, but the outside will be softer.
Serving
Serve the warm taco pockets with sour cream, salsa, guacamole, queso, or chipotle mayo for dipping.
