Cheesy Beef Puff Pastry
These Cheesy Beef Puff Pastry bites are golden, flaky, buttery, and filled with savory seasoned ground beef and plenty of gooey melted cheese. Ingredients
For the beef filling
- 1 tablespoon olive oil
- 1 lb (450 g) ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon dried oregano
- 1 tablespoon Worcestershire sauce
- 2 tablespoons tomato paste
- 2 tablespoons water
- 1 cup (100 g) shredded cheddar cheese
- ½ cup (50 g) shredded mozzarella cheese
- 2 tablespoons chopped fresh parsley, optional
For the pastry
- 1 package (about 17 oz / 500 g) frozen puff pastry, thawed
- 1 egg
- 1 tablespoon water
- ½ cup (50 g) additional shredded cheddar or mozzarella, for topping
- Sesame seeds or everything-bagel seasoning, optional
Instructions
- Prepare the beef filling.
Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3–4 minutes, until softened and translucent. - Brown the beef.
Add the ground beef and cook for 6–8 minutes, breaking it apart with a wooden spoon as it cooks. Continue until the beef is browned and no longer pink. - Season the filling.
Add the garlic, salt, black pepper, paprika, onion powder, and oregano. Cook for another 30–60 seconds, just until fragrant. - Add the flavor.
Stir in the Worcestershire sauce and tomato paste. Add the water and stir everything together. Cook for another 2–3 minutes, allowing the mixture to thicken. - Cool the beef.
Remove the skillet from the heat and let the beef mixture cool for at least 10–15 minutes.This step is important. If the filling is very hot when added to the puff pastry, it can melt the butter layers in the pastry and prevent it from puffing properly.
- Add the cheese.
Once the beef mixture has cooled, stir in the shredded cheddar, mozzarella, and parsley.
Assemble the Pastries
- Preheat the oven.
Heat your oven to 400°F (200°C). Line a baking sheet with parchment paper. - Roll out the pastry.
Place the thawed puff pastry on a lightly floured surface. If necessary, gently roll it out until it’s slightly thinner and smooth. - Cut the pastry.
Cut the pastry into approximately 4–6-inch squares, depending on how large you want your pastries. - Fill each square.
Place a generous spoonful of the cheesy beef filling in the center of each pastry square. Don’t overfill them, or the filling may spill out while baking. - Fold the pastry.
Fold the pastry diagonally to form a triangle, or bring the corners together to make a pocket. Press the edges firmly with your fingers. - Seal the edges.
Use the tines of a fork to crimp around the edges, creating a tight seal and an attractive pattern. - Prepare the egg wash.
Whisk together the egg and 1 tablespoon of water. Brush the tops of the pastries with the egg wash. - Add toppings.
Sprinkle with a little extra shredded cheese and, if desired, sesame seeds or everything-bagel seasoning. - Bake.
Place the pastries on the prepared baking sheet, leaving space between them. Bake for 18–25 minutes, or until the puff pastry is deeply golden, crisp, and fully puffed. - Rest before serving.
Allow the pastries to cool for 5–10 minutes before serving. The filling will be extremely hot immediately after baking.
Tips for Perfect Cheesy Beef Puff Pastry
- Cool the filling completely before assembling for the flakiest pastry.
- Don’t overfill the pastry. A little less filling makes it much easier to seal.
