Cheesy Beef Puff Pastry

Flaky, golden puff pastry wrapped around a savory, cheesy beef filling makes this an easy and satisfying appetizer, snack, or weeknight meal. The filling is rich with seasoned ground beef, caramelized onion, and plenty of melted cheese.
Ingredients
Beef Filling
- 1 lb (450 g) ground beef
- 1 tbsp olive oil
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp paprika
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp tomato paste
- 1 tbsp ketchup, optional
- 1 cup (100 g) shredded cheddar cheese
- ½ cup (50 g) shredded mozzarella cheese
- 2 tbsp chopped fresh parsley, optional
Pastry
- 1 package (17.3 oz / 490 g) frozen puff pastry, thawed
- 1 large egg
- 1 tbsp water
- 1 tbsp sesame seeds or everything-bagel seasoning, optional
Instructions
1. Preheat the oven
Preheat your oven to 400°F (200°C).
Line a large baking sheet with parchment paper.
2. Cook the beef
Heat the olive oil in a large skillet over medium-high heat.
Add the ground beef and cook for 5–7 minutes, breaking it apart as it browns.
Drain excess grease if necessary.
3. Add the onion
Add the diced onion.
Cook for 3–4 minutes, until softened and lightly golden.
Add the garlic and cook for another 30 seconds.
4. Season the filling
Stir in the Worcestershire sauce, paprika, Italian seasoning, garlic powder, onion powder, salt, pepper, and tomato paste.
Add the ketchup if using.
Cook for another 1–2 minutes, stirring well.
Remove from the heat.
5. Add the cheese
Allow the beef mixture to cool for approximately 5 minutes.
Stir in the cheddar, mozzarella, and parsley.
The filling should be cheesy but not excessively wet.
Prepare the Puff Pastry
6. Roll out the pastry
Lightly flour your work surface.
Unfold the thawed puff pastry and gently roll it out just enough to smooth the creases.
Don’t roll it too thin.
Cut each pastry sheet into rectangles or squares, depending on the shape you want.
7. Fill the pastry
Place approximately 2–3 tablespoons of beef filling in the center of each piece.
Don’t overfill.
Leave at least a ½-inch border around the edges.
8. Seal
Brush the edges lightly with water.
Fold the pastry over the filling to create a pocket.
Press the edges together firmly with your fingers.
Then crimp the edges with a fork to create a secure seal.
9. Vent the pastry
Transfer the pockets to the prepared baking sheet.
Use a sharp knife to cut 1–2 small slits in the top of each pocket.
This allows steam to escape and helps prevent the pastry from becoming soggy.
Add the Egg Wash
10. Prepare the egg wash
Whisk together the egg and 1 tablespoon water.
Brush the tops of the pastry generously with the egg wash.
Sprinkle with sesame seeds or everything-bagel seasoning if desired.
Bake
11. Bake until golden
Bake for 20–25 minutes, or until the puff pastry is deeply golden, crisp, and fully puffed.
If making larger pockets, they may need closer to 30 minutes.
12. Rest
Remove from the oven and allow the pastries to rest for 5–10 minutes before serving.
The filling will be extremely hot immediately after baking.
Cheesy Beef Puff Pastry Braid
For a centerpiece-style version:
- Roll one sheet of puff pastry into a rectangle.
- Place the beef filling down the center.
- Cut diagonal strips along both sides.
- Fold the strips over the filling, alternating sides.
- Brush with egg wash.
- Bake at 400°F (200°C) for 25–30 minutes.
The result is a beautiful golden, cheesy beef braid.
Spicy Version
Add to the beef mixture:
- ½ tsp crushed red pepper
- 1 diced jalapeño
- 1 tbsp hot sauce
Use pepper Jack instead of mozzarella for extra heat.
Philly Cheesesteak Style
Replace the Italian seasoning with a little steak seasoning.
Add:
- ½ cup finely diced green bell pepper
- ½ cup sliced mushrooms
- Extra onions
- Provolone cheese
Cook the vegetables with the beef before filling the pastry.
Cheeseburger Version
Add:
- 1 tbsp yellow mustard
- 1 tbsp ketchup
- 2 tbsp finely diced pickles
Use cheddar as the main cheese.
Serve with burger sauce for dipping.
Tips for Flaky Puff Pastry
Keep the pastry cold
If the pastry becomes soft or sticky while you’re working, place it in the refrigerator for 10–15 minutes.
Cold butter creates better layers and more dramatic puffing.
Cool the filling
Don’t put piping-hot beef into the pastry.
Excess heat can melt the pastry butter before it reaches the oven.
Don’t overfill
Too much filling makes sealing difficult and can cause the pastry to split.
Seal firmly
A fork-crimped edge helps prevent the melted cheese from escaping.
Use a hot oven
Make sure the oven is fully preheated before baking.
Make Ahead
Prepare the beef filling up to 2 days ahead and refrigerate it.
When ready to bake, assemble the pastries with the chilled filling.
You can also assemble the uncooked pockets several hours ahead and refrigerate them until baking.
Brush with egg wash immediately before placing them in the oven.
Freezing
Unbaked pastry pockets can be frozen on a parchment-lined tray until solid.
Transfer them to a freezer-safe container or bag.
Bake directly from frozen at 400°F (200°C), adding approximately 8–12 minutes to the cooking time.
Brush with egg wash before baking.
Storage
Store cooked pastries in an airtight container in the refrigerator for up to 3–4 days.
Reheat in a 375°F (190°C) oven or air fryer for the crispiest results.
Avoid reheating in the microwave if possible, as it softens the puff pastry.
