These High-Protein Banana Pudding Dessert Cups have all the creamy, nostalgic flavor of banana pudding with a protein-rich twist. Creamy vanilla pudding, Greek yogurt, fresh banana, and crunchy vanilla cookies come together in individual no-bake cups.

Ingredients

Protein pudding

  • 1½ cups (340 g) plain or vanilla Greek yogurt
  • 1 cup (240 ml) milk of choice
  • 1 scoop (25–30 g) vanilla protein powder
  • 1 small box (3.4 oz / 96 g) instant sugar-free or regular vanilla pudding mix
  • 1 tsp vanilla extract
  • 1–2 tbsp honey or maple syrup, optional
  • Pinch of salt

For layering

  • 3 medium ripe bananas
  • 12–16 vanilla wafer cookies or gluten-free vanilla cookies
  • ½ cup whipped cream or whipped topping

Optional toppings

  • Crushed vanilla wafers
  • Banana slices
  • Cinnamon
  • Chopped pecans
  • Sugar-free caramel drizzle
  • A little grated dark chocolate

Instructions

1. Make the protein pudding

Add the Greek yogurt, milk, protein powder, pudding mix, vanilla, and salt to a large bowl.

Whisk vigorously for 1–2 minutes, until smooth and thick.

Taste the mixture.

If you’d like it sweeter, add 1–2 tablespoons of honey or maple syrup.

Let the pudding stand for approximately 5 minutes so it can thicken.

2. Prepare the bananas

Peel the bananas and slice them into thin rounds.

For the best texture, use bananas that are ripe and sweet but still firm enough to slice neatly.

3. Add the cookie layer

Place approximately 2 crushed vanilla wafers in the bottom of each serving glass or small jar.
