This rich, creamy Fat Bomb Fluff is a quick no-bake dessert made with cream cheese, whipped cream, nut butter, and coconut. It’s fluffy, satisfying, and easy to customize with chocolate, berries, or chopped nuts.

Ingredients

  • 8 oz (225 g) full-fat cream cheese, softened
  • ½ cup (120 g) creamy peanut butter or almond butter
  • ¼ cup (60 g) unsalted butter, softened
  • ¼ cup powdered erythritol or your preferred powdered sweetener
  • 1 tsp vanilla extract
  • ½ cup unsweetened shredded coconut
  • 1 cup (240 ml) heavy whipping cream, very cold
  • ¼ tsp salt

Optional additions

  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp sugar-free chocolate chips
  • ¼ cup chopped pecans or walnuts
  • 1 tbsp chia seeds
  • ½ tsp cinnamon
  • Unsweetened coconut flakes, for topping

Instructions

1. Soften the ingredients

Allow the cream cheese and butter to soften at room temperature for approximately 20–30 minutes.

They should be soft enough to mix easily but shouldn’t be melted.

2. Make the creamy base

Place the softened cream cheese, peanut butter, butter, powdered sweetener, vanilla, and salt in a large mixing bowl.

Beat with an electric mixer for approximately 2–3 minutes, until completely smooth and fluffy.

Scrape down the sides of the bowl as needed.

If you’re making the chocolate version, add the cocoa powder at this stage.

3. Whip the cream

In a separate chilled bowl, pour in the cold heavy cream.

Beat on medium-high speed until stiff peaks form.

The whipped cream should hold its shape when the beaters are lifted.

Don’t overbeat it into butter.

4. Fold everything together

Add about one-third of the whipped cream to the cream cheese mixture.

Fold gently to lighten the mixture.

Add the remaining whipped cream in two additions, folding carefully after each addition.

Gentle folding keeps the fluff light and airy.

5. Add the coconut

Fold in the shredded coconut.

If you’re adding chopped pecans, walnuts, chocolate chips, or chia seeds, gently fold them in now.

Reserve a little for garnish.

6. Chill

Divide the fluff among four small bowls or dessert glasses.

Refrigerate for at least 30 minutes.

For a firmer texture and deeper flavor, refrigerate for 1–2 hours.

7. Garnish

Just before serving, sprinkle the tops with shredded coconut, chopped nuts, cocoa powder, or a few sugar-free chocolate chips.

A tiny pinch of flaky salt is excellent with the peanut butter and chocolate versions.

Chocolate Peanut Butter Fat Bomb Fluff

For an especially rich version, use:

  • Peanut butter
  • 2 tbsp cocoa powder
  • 2 tbsp sugar-free dark chocolate chips
  • Chopped peanuts for topping

The result tastes similar to a creamy peanut-butter chocolate mousse.

Coconut Almond Version

Replace the peanut butter with almond butter.

Add:

  • ¼ tsp almond extract
  • Extra toasted coconut
  • Chopped almonds

Toast the coconut and almonds in a dry skillet for a few minutes before adding them for a deeper, nuttier flavor.

Berry Cheesecake Version

For a fruity variation, leave out the coconut and stir in a small handful of chopped strawberries or raspberries.

Serve with a few fresh berries on top.

If keeping the recipe very low-carb, use berries sparingly.

Tips for the Best Fluff

Use room-temperature cream cheese

Cold cream cheese can leave little lumps throughout the mixture.

Use powdered sweetener

Granulated sweetener may remain gritty.

Powdered sweetener dissolves much more smoothly.

Keep the cream cold

Cold heavy cream whips faster and holds its structure better.

Don’t overmix

Once the whipped cream is added, fold gently rather than beating the mixture.

This preserves the airy texture.

Toast the coconut

For a richer flavor, toast the shredded coconut in a dry skillet over medium-low heat until lightly golden.

Allow it to cool completely before adding it to the fluff.

Make-Ahead Instructions

This dessert is excellent for making ahead.

Prepare it up to 2 days in advance and keep it covered in the refrigerator.

The mixture will become slightly firmer as it chills.

Give it a gentle stir before serving if necessary.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3–4 days.

Because it contains whipped cream, don’t leave it sitting at room temperature for extended periods.

Serving Ideas

Spoon the fluff into small dessert cups and top with chopped pecans, unsweetened coconut, a few dark chocolate pieces, and a pinch of flaky salt.

For a more indulgent presentation, layer it with chocolate crunch or alternate it with whipped cream in a clear glass.
