🥬 Cabbage and Onion Soup

A simple, comforting soup made with tender cabbage, sweet onions, carrots, and a flavorful broth. It’s inexpensive, filling, and perfect for a light lunch or cozy dinner.

Ingredients

  • ½ large head green cabbage, thinly sliced

  • 2 large onions, thinly sliced

  • 2 carrots, sliced

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil or butter

  • 6 cups (1.4 L) vegetable or chicken broth

  • 1 teaspoon dried thyme

  • 1 bay leaf

  • ½ teaspoon black pepper

  • ½ teaspoon salt, or to taste

  • 1 tablespoon fresh parsley, chopped

  • 1 teaspoon lemon juice, optional

Instructions

1. Sauté the Onions

Heat the olive oil or butter in a large pot over medium heat.

Add the onions and cook for 8–10 minutes, stirring occasionally, until soft and lightly golden.

2. Add the Vegetables

Add the carrots and garlic. Cook for another 2 minutes.

Add the sliced cabbage and stir everything together.

3. Add the Broth

Pour in the broth and add the thyme, bay leaf, black pepper, and salt.

Bring the soup to a gentle boil.

4. Simmer

Reduce the heat, cover partially, and simmer for 25–30 minutes, or until the cabbage and carrots are tender.

5. Finish

Remove the bay leaf.

Stir in the fresh parsley and, if desired, a small splash of lemon juice to brighten the flavor.

Taste and adjust the seasoning.

🍲 Optional Additions

Make the soup more substantial with:

  • Potatoes: Add 1–2 diced potatoes with the carrots.

  • Beans: Add a can of drained white beans for extra protein.

  • Chicken: Add shredded cooked chicken.

  • Tomatoes: Add a can of diced tomatoes for a more tomato-based version.

  • Beef: Brown ground beef before adding the onions for a hearty meal.

  • Spice: Add red pepper flakes or a pinch of smoked paprika.

Serve hot with crusty bread, whole-grain toast, or a grilled cheese sandwich.

⭐ Tip for Better Flavor

For a richer soup, allow the onions to slowly caramelize before adding the cabbage. Those browned onions provide a naturally sweet, savory flavor without needing much seasoning.
