- ¾ cup (90 g) dried cranberries, finely chopped
- ½ cup (65 g) unsalted pistachios, finely chopped
- 1 tsp finely grated orange zest, optional

- 1 tsp coconut oil or shortening

👩🍳 Instructions
1. Prepare the butter
Place the softened butter in a large mixing bowl.
Beat it with an electric mixer for about 1–2 minutes, until smooth and creamy.
Don’t whip it excessively—the goal is a smooth shortbread rather than an especially airy cookie.
2. Add the sugar
Add the powdered sugar.
Beat for another 1–2 minutes, until the mixture is smooth and well combined.
Add the vanilla extract and almond extract, if using.
For a brighter flavor, add the orange zest as well.
3. Add the flour
In a separate bowl, whisk together the flour and salt.
Gradually add the dry ingredients to the butter mixture.
Mix on low speed until the dough just comes together.
Avoid overmixing. Overworked shortbread can become tough instead of tender.
4. Add cranberries and pistachios
Add the chopped dried cranberries and pistachios.
Use a spatula or your hands to gently distribute them throughout the dough.
Make sure they’re evenly spread so every cookie gets plenty of cranberry and pistachio.

5. Form a log
Transfer the dough onto a sheet of parchment paper.
Shape it into a firm log approximately 2 inches (5 cm) in diameter.
Roll the parchment around it and twist the ends to secure it.
For perfectly round cookies, gently roll the wrapped dough back and forth on the counter.
6. Chill
Refrigerate the dough for at least 1 hour.
For even better flavor, you can refrigerate it overnight.
The dough needs to become firm enough to slice cleanly.

7. Preheat the oven
Preheat your oven to 350°F (175°C).
Line two baking sheets with parchment paper.
8. Slice the cookies
Remove the dough from the refrigerator.
Using a sharp knife, slice it into rounds approximately ¼ inch (6 mm) thick.
If the edges crack slightly, simply press them gently back together.
Place the cookies on the prepared baking sheets, leaving about 1 inch of space between them.
9. Bake
Bake for approximately 12–15 minutes.
The cookies should remain relatively pale, with the edges just beginning to turn light golden brown.
Don’t wait for the entire cookie to become dark golden—shortbread is best when it’s lightly baked and tender.
10. Cool
Allow the cookies to cool on the baking sheet for about 5 minutes.
They’re delicate while hot.
Then carefully transfer them to a wire rack to cool completely.

11. Melt the chocolate
Place the white chocolate chips and coconut oil in a microwave-safe bowl.
Heat in 15–20 second intervals, stirring between each interval, until completely smooth.
12. Decorate
Dip half of each cooled cookie into the melted chocolate, or drizzle the chocolate over the tops.
Immediately sprinkle with chopped pistachios and finely chopped cranberries.
Allow the chocolate to set completely before storing.
⭐ Tips for Perfect Shortbread
Use softened, not melted, butter. Melted butter changes the structure and can make the cookies spread.
Don’t overmix after adding flour. Mix only until the dough comes together.
Chill the dough well. This keeps the cookies from spreading and makes slicing much easier.
Chop the cranberries fairly small. Large pieces can make the cookies difficult to slice.
Don’t overbake. The cookies should be pale with lightly golden edges.
