🍫 MawMaw Hamrick’s Chocolate Pie

A classic Southern-style chocolate pie with a creamy homemade chocolate filling and flaky crust.

Ingredients

For the pie:

  • 1 unbaked 9-inch pie crust

  • 1½ cups granulated sugar

  • ⅓ cup unsweetened cocoa powder

  • ¼ cup all-purpose flour

  • ¼ tsp salt

  • 2 cups whole milk

  • 4 large egg yolks

  • 2 tbsp butter

  • 1 tsp vanilla extract

For the meringue:

  • 4 large egg whites

  • ¼ tsp cream of tartar

  • ½ cup granulated sugar

  • 1 tsp vanilla extract

Instructions

  1. Bake the crust: Preheat the oven to 375°F (190°C). Blind-bake the pie crust according to its package or recipe instructions. Let it cool slightly.

  2. Make the chocolate filling: In a saucepan, whisk together sugar, cocoa, flour, and salt. Gradually whisk in the milk until smooth.

  3. Temper the eggs: Whisk the egg yolks in a separate bowl. Slowly add about 1 cup of the warm milk mixture while whisking constantly. Pour the egg mixture back into the saucepan.

  4. Cook: Cook over medium heat, stirring constantly, until the filling becomes thick and begins to bubble—about 7–10 minutes.

  5. Add flavor: Remove from the heat and stir in butter and vanilla.

  6. Fill the crust: Pour the hot chocolate filling into the baked crust.

  7. Make the meringue: Beat egg whites and cream of tartar until foamy. Gradually add sugar and continue beating until stiff, glossy peaks form. Beat in vanilla.

  8. Top the pie: Spread the meringue over the hot filling, making sure it reaches the crust edges.

  9. Bake: Bake at 350°F (175°C) for about 10–15 minutes, until the meringue is lightly golden.

  10. Cool completely: Let the pie cool at room temperature, then refrigerate for several hours before slicing.
