Classic Southern Buttermilk Pancakes

Classic Southern Buttermilk Pancakes

These classic Southern buttermilk pancakes are thick, fluffy, tender, and lightly crisp around the edges. The buttermilk gives them that traditional tangy flavor, while a little melted butter makes them rich and delicious.Yield: 10–12 pancakes
Prep time: 10 minutes
Resting time: 10 minutes
Cook time: 15–20 minutes
Total time: About 40 minutes

Ingredients

  • 2 cups (250 g) all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 large eggs, room temperature
  • 2 cups (480 ml) buttermilk
  • 4 tbsp (55 g) unsalted butter, melted and slightly cooled
  • 1 tsp vanilla extract
  • Extra butter or oil, for cooking

For serving

  • Butter
  • Warm maple syrup
  • Fresh berries
  • Sliced bananas
  • Powdered sugar (optional)

Instructions

1. Mix the dry ingredients

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Make sure the baking soda is evenly distributed.

2. Mix the wet ingredients

In a separate bowl, whisk the eggs.

Add the buttermilk, melted butter, and vanilla.

Whisk until everything is well combined.

3. Combine the batter

Make a well in the center of the dry ingredients.

Pour in the buttermilk mixture.

Using a whisk or rubber spatula, gently mix until just combined.

Don’t overmix. A few small lumps are completely fine.

The batter should be thick and fluffy rather than thin and runny.

4. Let the batter rest

Allow the batter to rest for about 10 minutes.

This gives the flour time to absorb the buttermilk and allows the leavening agents to start working.

You’ll notice the batter becoming slightly thicker and bubbly.

🥞 Cook the Pancakes

5. Heat your skillet

Place a large nonstick skillet or griddle over medium heat.

Let it heat for about 2–3 minutes.

Lightly butter the surface.

You want the pan hot enough to make the batter sizzle gently, but not so hot that the pancakes burn before the centers cook.

6. Add the batter

Pour about ¼ cup of batter onto the skillet for each pancake.

Leave enough space between them so you can easily flip them.

Don’t spread the batter with your spoon—the thick batter should spread naturally.

7. Cook the first side

Cook for approximately 2–3 minutes.

You’ll know it’s time to flip when:

  • Bubbles appear across the surface.
  • The edges look set.
  • The underside is golden brown.
  • Some bubbles begin to pop and stay open.

8. Flip

Slide a spatula underneath the pancake and flip it confidently.

Cook the second side for another 1–2 minutes, until golden brown and cooked through.

Don’t press down on the pancake with your spatula. This pushes out the air and can make the pancakes dense.

9. Repeat

Continue cooking the remaining batter.

Add a small amount of butter to the skillet between batches if necessary.

Keep the finished pancakes warm on a plate while you cook the rest.

🧈 Serve

Stack 2–3 warm pancakes on each plate.

Top with a generous pat of butter and pour warm maple syrup over the stack.

Add fresh berries or sliced bananas if desired.

For a classic Southern breakfast, serve them alongside crispy bacon or breakfast sausage.

⭐ Secrets to Fluffy Pancakes

Don’t overmix

Overmixing develops gluten and makes pancakes chewy rather than fluffy.

Use real buttermilk

Its acidity reacts with the baking soda to create bubbles that help the pancakes rise.

Don’t flatten them

Let the batter puff naturally while cooking.

Control the heat

Medium heat is usually best. If the outside browns before the center cooks, reduce the heat slightly.

Don’t make them too large

¼ cup of batter makes a manageable pancake that cooks evenly.

🍓 Delicious Variations

Blueberry Buttermilk Pancakes

Fold 1 cup fresh blueberries gently into the batter just before cooking.

Banana Pecan Pancakes

Fold in 1 mashed ripe banana and ½ cup chopped toasted pecans.

Cinnamon Roll Pancakes

Add 1 tsp cinnamon to the batter and swirl a mixture of melted butter, brown sugar, and cinnamon over each pancake while cooking.

Chocolate Chip

Fold ½ cup mini chocolate chips into the batter.

Strawberry Shortcake Pancakes

Top the pancakes with sliced strawberries, whipped cream, and warm maple syrup.

🥛 No Buttermilk?

You can make a quick substitute.

Add 1 tablespoon lemon juice or white vinegar to a measuring cup, then add regular milk until you reach 1¾ cups (420 ml).

Stir and let it stand for 5–10 minutes before using.

For the most authentic Southern flavor and texture, though, real buttermilk is best.

🥞 Best finishing touch

Serve the pancakes immediately with butter, warm maple syrup, and a handful of fresh berries. For an extra-special breakfast, add crispy bacon on the side—the salty-sweet combination is hard to beat.
