🧄 Cheesy Garlic Chicken Meatballs
Juicy, tender chicken meatballs stuffed with melty cheese and packed with garlic flavor. They’re perfect as an appetizer, weeknight dinner, or served over pasta.
Ingredients

1 lb (450 g) ground chicken

½ cup breadcrumbs

1 large egg

3 cloves garlic, minced

½ cup shredded mozzarella

¼ cup grated Parmesan

2 tablespoons chopped fresh parsley

½ teaspoon Italian seasoning

½ teaspoon salt
-
¼ teaspoon black pepper

2 tablespoons olive oil

12 small cubes mozzarella, for stuffing
Instructions
1. Prepare the Mixture
In a large bowl, combine the ground chicken, breadcrumbs, egg, garlic, Parmesan, shredded mozzarella, parsley, Italian seasoning, salt, and pepper. Mix gently until just combined.
2. Add the Cheese Center
Take a small portion of the mixture and flatten it in your palm. Place a mozzarella cube in the center, then fold the chicken mixture around it and roll into a ball. Make sure the cheese is completely covered.
Repeat with the remaining mixture.
3. Cook the Meatballs
Heat olive oil in a large skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned on all sides and cooked through, about 10–12 minutes, depending on size.
4. Check for Doneness
Ground chicken should reach an internal temperature of 165°F (74°C). The cheese inside should be melted and gooey.
5. Serve

🔥 Oven Option
Place the meatballs on a parchment-lined baking sheet and bake at 400°F (200°C) for about 18–22 minutes, or until the chicken reaches 165°F (74°C).
Tip: Don’t overmix the chicken mixture. Gentle mixing keeps the meatballs tender rather than dense.
