Ingredients
For the butter pecans
- 1½ cups (165 g) pecan halves, roughly chopped
- 2 tbsp unsalted butter
- 2 tbsp brown sugar
- Ÿ tsp salt
- ½ tsp vanilla extract
For the ice cream base
- 2 cups (480 ml)Â heavy whipping cream
- 1 cup (240 ml)Â whole milk
- ž cup (150 g) granulated sugar
- 4 large egg yolks
- 1 tbsp vanilla extract
- Ÿ tsp salt
- 2â3 tbsp Hennessy
- 2 tbsp brown sugar (optional, for a deeper caramel flavor)
Instructions
1. Toast the pecans
Place a large skillet over medium-low heat.
Add the chopped pecans and toast for about 3â5 minutes, stirring frequently.
You should begin to smell a rich, nutty aroma. Be careful not to burn them because pecans can go from toasted to bitter surprisingly quickly.
Transfer the toasted pecans to a plate.
2. Make the buttery pecans
Return the skillet to low heat and add the butter.
Once melted, add the brown sugar and salt.
Stir until the sugar begins to dissolve.
Add the toasted pecans and cook for another 1â2 minutes, stirring constantly.
Remove from the heat and stir in the vanilla.
Spread the pecans on parchment paper and allow them to cool completely.
3. Prepare the ice cream base
Pour the heavy cream and whole milk into a medium saucepan.
Add the granulated sugar and optional brown sugar.
Heat over medium heat, stirring occasionally, until the mixture is hot and steaming.
Do not bring it to a full boil.
4. Whisk the egg yolks
Place the egg yolks in a separate bowl.
Whisk them until smooth.
Slowly pour about ½ cup of the hot cream mixture into the yolks while whisking constantly.
This gently warms the eggs instead of scrambling them.
5. Combine everything
Slowly pour the warmed egg mixture back into the saucepan while whisking continuously.
Cook over low to medium-low heat, stirring constantly with a wooden spoon or spatula.
Continue until the mixture thickens enough to coat the back of the spoon.
This usually takes around 5â8 minutes.
Don’t let it boil.
6. Strain the custard
Pour the mixture through a fine-mesh strainer into a clean bowl.
This removes any tiny pieces of cooked egg and gives you an exceptionally smooth ice cream base.
Stir in the vanilla and salt.
7. Add the Hennessy
Allow the custard to cool for a few minutes, then stir in 2â3 tablespoons of Hennessy.
Start with 2 tablespoons if you want a subtle flavor.
Use 3 tablespoons for a stronger Hennessy character.
Don’t add too much alcohol, because alcohol lowers the freezing point and can prevent the ice cream from firming properly.
8. Chill the mixture
Cover the bowl and refrigerate for at least 4 hours, preferably overnight.
The mixture should be completely cold before churning.
For an even faster chill, place the bowl over an ice bath and stir occasionally until cold, then refrigerate.
9. Churn
Pour the chilled custard into your ice cream maker.
Churn according to your machine’s instructions, usually around 20â30 minutes.
When the ice cream becomes thick and resembles soft serve, it’s ready for the pecans.
10. Add the butter pecans
Reserve a small handful of pecans for the top.
Fold the remaining butter pecans into the churned ice cream.
Don’t overmixâyou want little pockets of buttery pecans throughout the ice cream.
11. Freeze
Transfer the ice cream to a freezer-safe container.
Press a piece of parchment paper or plastic wrap directly against the surface to reduce ice crystals.
Freeze for at least 4 hours, or until firm.
Let it sit at room temperature for 5â10 minutes before scooping.

You can still make it.
After preparing and chilling the custard:
- Whip 2 cups cold heavy cream until stiff peaks form.
- Gently fold the chilled custard into the whipped cream.
- Fold in the cooled butter pecans.

- Freeze for 6â8 hours or overnight.
The texture will be slightly different from churned ice cream, but still delicious and creamy.
