🥚 Low-Carb English Muffins in a Mug

These are soft and slightly chewy in the middle with a lightly crisp, toasted outside. They’re ready in about 2–3 minutes, including preparation and toasting.

Ingredients — Makes 1 English Muffin

  • 1 large egg
  • 1 tbsp melted butter
  • 2 tbsp almond flour
  • 1 tbsp coconut flour
  • ÂĽ tsp baking powder
  • â…› tsp salt
  • 1 tbsp shredded mozzarella (optional, but adds a nice texture)
  • ÂĽ tsp garlic powder (optional for savory muffins)

  • Butter
  • Cream cheese

Instructions

1. Prepare your container

Use a wide, microwave-safe ramekin or mug about 3–4 inches wide. The shape is important because you want the finished bread to resemble an English muffin rather than a tall cake.

Grease the container generously with a little butter.

2. Make the batter

Add the egg and melted butter to the container.

Whisk with a fork until the egg is completely beaten and the butter is incorporated.

Add the almond flour, coconut flour, baking powder, and salt.

Mix thoroughly until you have a thick, smooth batter.

If you’re using mozzarella, stir it in now.

3. Microwave

Microwave on HIGH for 60–90 seconds.

Start with 60 seconds and check the center. If it still looks wet, continue cooking in 10–15 second intervals.

You want the muffin to be firm and springy, but don’t overcook it or it can become rubbery.

4. Cool briefly

Let it sit for 30–60 seconds.

Run a knife around the edge and carefully remove the muffin from the container.

5. Slice it

Place the muffin on a cutting board and carefully cut it horizontally through the middle.

You’ll now have a top and bottom just like a traditional English muffin.

6. Toast it 🔥

For the best texture, toast both halves in a dry skillet over medium heat for 1–2 minutes per side.

You can also use a toaster if the muffin is firm enough.

The edges should become golden and slightly crisp.

Put the toasted bottom half on a plate and add:

  1. A little butter
  2. A fried egg
  3. A slice of cheddar cheese
  4. Cooked bacon or sausage
  5. The toasted top half

You get a delicious low-carb breakfast sandwich without regular bread.

Because brands and ingredient amounts vary, the exact numbers will differ, but one muffin made with almond and coconut flour is typically around 3–5 g net carbs.

If you’re following a strict zero-carb diet, this isn’t technically zero-carb because eggs, almond flour, and coconut flour contain small amounts of carbohydrates.
