Ingredients

Salad

  • 4 cups finely shredded green cabbage
  • 2 cups finely shredded purple cabbage
  • 1 large cucumber, thinly sliced
  • 1 large carrot, julienned or grated
  • ½ small red onion, very thinly sliced
  • 3 green onions, sliced
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons fresh cilantro, chopped, optional
  • 2 tablespoons toasted sesame seeds
  • ¼ cup chopped peanuts or cashews, optional

Creamy-Tangy Dressing

  • ⅓ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon toasted sesame oil
  • 1 small garlic clove, finely grated
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

1. Prepare the cabbage

Remove any tough outer cabbage leaves.

Finely shred both the green and purple cabbage.

Place them in a large bowl.

For extra-crisp cabbage, place the shredded cabbage in ice-cold water for 5–10 minutes, then drain extremely well.

Pat it dry before continuing.

2. Prepare the vegetables

Thinly slice the cucumber.

Julienne or grate the carrot.

Thinly slice the red onion.

Slice the green onions.

Chop the parsley and cilantro.

Add everything to the cabbage.

3. Toast the sesame seeds

Place the sesame seeds in a dry skillet over medium-low heat.

Toast for approximately 2–3 minutes, stirring frequently.

Remove as soon as they become lightly golden and fragrant.

Let them cool.

4. Make the dressing

Whisk together:

5. Combine

Pour the dressing over the vegetables.

  • 1 garlic clove, grated
  • 1 teaspoon lime juice

Skip the mayonnaise and Greek yogurt.

Add chopped peanuts and sesame seeds.
