Oatmeal Cottage Cheese Pancakes
Fluffy, tender pancakes made with oats and cottage cheese. They’re naturally protein-rich, lightly sweet, and delicious with fresh fruit, yogurt, or a drizzle of maple syrup.Servings: 2–3

Ingredients
- 1 cup rolled oats
- 1 cup cottage cheese
- 2 large eggs
- 1 ripe banana, optional but recommended
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1–2 tablespoons milk, only if needed
- 1 teaspoon butter or oil, for cooking
Optional additions
- ½ cup blueberries
- ½ teaspoon nutmeg
- 1 tablespoon maple syrup
- 1 tablespoon chia seeds
- 2 tablespoons chopped walnuts
- 1 tablespoon mini chocolate chips
1. Blend the batter
Add the oats to a blender.
Blend for about 20–30 seconds until they resemble a coarse flour.
Add:
- Cottage cheese
- Eggs
- Banana
- Vanilla
- Baking powder
- Cinnamon
- Salt
Blend until mostly smooth.
It’s perfectly fine to leave a few tiny oat or cottage cheese pieces for texture.
2. Rest the batter
Let the batter sit for 5 minutes.
The oats will absorb some of the moisture and the mixture will thicken.
If it becomes too thick to pour, add 1 tablespoon milk and blend or stir again.
3. Heat the pan
Heat a nonstick skillet or griddle over medium-low to medium heat.
Lightly grease it with butter or oil.
Don’t use excessively high heat—the outside can brown before the center cooks.
4. Cook the pancakes
Pour approximately ¼ cup batter onto the skillet for each pancake.
Cook for 2–3 minutes, until bubbles appear on the surface and the edges look set.
If using blueberries or chocolate chips, sprinkle them over the pancakes before flipping.
5. Flip
Carefully flip each pancake.
Cook for another 1–2 minutes, until golden brown and cooked through.
Repeat with the remaining batter.
Add a tiny amount of butter or oil between batches if necessary.
6. Serve
Stack the pancakes and top with your favorites:
- Fresh berries
- Banana slices
- Greek yogurt
- Cottage cheese
- Chopped nuts
- Peanut butter
- Almond butter
- Maple syrup
- Honey
A dusting of cinnamon makes a simple finishing touch.
Blueberry Cottage Cheese Pancakes
Fold ½ cup fresh or frozen blueberries into the batter after blending.
Don’t blend the blueberries into the batter unless you want purple pancakes.
Cook as directed.
Serve with Greek yogurt and fresh blueberries.
Chocolate Chip Version
Add 2 tablespoons mini chocolate chips to the batter.
Use banana for natural sweetness and add a little extra cinnamon.
Top with sliced banana and a small drizzle of peanut butter.
Apple Cinnamon Version
Add:
- ½ cup finely grated apple
- ½ teaspoon additional cinnamon
- ¼ teaspoon nutmeg
- 2 tablespoons chopped walnuts
Squeeze excess liquid from the grated apple before adding it.
These taste like a warm apple-cinnamon breakfast cake.
Higher-Protein Version
Add ½ cup Greek yogurt or 1 scoop vanilla protein powder.
If using protein powder, add 2–4 tablespoons milk until the batter reaches pancake consistency.
Let the batter rest for a few minutes before cooking.

- Use medium-low heat.
