- 4 cups (950 ml) water
- 1–2 tablespoons fresh lemon juice, optional
- 1–2 teaspoons honey, optional
- Fresh mint, optional
- Ice, for serving

Add the water and sliced ginger to a saucepan. Bring to a gentle boil. - Cook gently.
Reduce the heat and simmer for 10–15 minutes. The longer it simmers, the stronger and spicier the ginger flavor will become. - Strain.
Remove the saucepan from the heat. Strain the ginger water into a heatproof pitcher or cups. - Add lemon and honey.
Stir in fresh lemon juice and honey, if using. Adjust the amount to your taste. - Serve hot or cold.
Enjoy immediately while warm, or allow it to cool and refrigerate until chilled. Serve over ice with lemon slices and fresh mint.
For Stronger Ginger Water
Use a 3-inch piece of ginger and simmer for up to 20 minutes. You can also grate the ginger instead of slicing it, which releases more flavor.
