Zero-Carb Bread in a Mug — 90 Seconds

This quick zero-carb-style mug bread is soft, fluffy, and ready in about 90 seconds. It’s made without flour or grains and works beautifully as a quick low-carb substitute for toast, sandwiches, or burger buns.

Note: Truly zero-carb bread depends on the exact ingredients and brands used. This recipe is designed to be very low in carbohydrates, rather than literally zero-carb.

Ingredients

  • 1 large egg
  • 1 tablespoon melted butter
  • 2 tablespoons finely ground pork rinds
  • 1 tablespoon cream cheese, softened
  • ¼ teaspoon baking powder
  • ⅛ teaspoon salt
  • ¼ teaspoon garlic powder, optional
  • ¼ teaspoon dried herbs, optional

Instructions

  1. Prepare the mug.
Lightly grease a microwave-safe mug or small ramekin with butter or cooking spray.
  2. Combine the wet ingredients.
Crack the egg into the mug and whisk well. Add the melted butter and softened cream cheese, then whisk until mostly smooth.
  3. Add the dry ingredients.
Stir in the finely ground pork rinds, baking powder, salt, and any garlic powder or herbs you’re using.

Mix until you have a smooth, thick batter.

  4. Let it rest.
Allow the mixture to sit for about 30 seconds so the pork rind crumbs can absorb some of the moisture.
  5. Microwave.
Microwave on HIGH for approximately 75–90 seconds.

The bread should look puffed and feel firm in the center. Microwave ovens vary, so check it at 75 seconds and add another 10–15 seconds if necessary.

  6. Release the bread.
Let it cool for about 30 seconds, then carefully loosen the edges with a knife and turn the bread out onto a plate.
  7. Slice and toast.
Cut the bread in half horizontally.

For the best texture, toast the slices in a skillet, toaster, or air fryer until lightly golden and crisp.

Tips for Better Mug Bread

  • Use a wide, shallow mug or ramekin for bread that’s easier to slice.
  • Don’t overcook it—the bread can become rubbery if microwaved too long.
  • Finely ground pork rinds give the smoothest texture.
  • Toasting the finished bread makes it much more bread-like.
  • Let the bread cool briefly before slicing so it can firm up.

Flavor Variations

Garlic Herb:
Add garlic powder, dried oregano, and Italian seasoning.

Cheesy:
Add 1 tablespoon shredded cheddar or Parmesan to the batter.

Everything Bagel:
Add everything-bagel seasoning to the batter and sprinkle more on top before microwaving.

Breakfast Bread:
Keep it plain and serve with scrambled eggs, bacon, or sausage.

Sweet Version:
Omit the garlic and herbs, add a pinch of cinnamon and a few drops of vanilla, and serve with butter.

Air Fryer Finish

After microwaving, slice the bread in half and air fry at 375°F (190°C) for 2–3 minutes until golden and crisp.

Storage

This recipe is best eaten immediately. If needed, refrigerate the cooked bread in an airtight container for up to 2 days and toast it before serving.
