High-Protein Oatmeal & Cottage Cheese Pancakes
These high-protein oatmeal and cottage cheese pancakes are fluffy, tender, and naturally filling. Cottage cheese adds a creamy texture and plenty of protein, while oats give the pancakes a hearty, satisfying base. They’re perfect for breakfast, meal prep, or a post-workout meal.
Ingredients
For the pancakes
- 1 cup (90 g) old-fashioned rolled oats
- 1 cup (225 g) cottage cheese
- 2 large eggs
- 1 ripe banana
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1–2 tablespoons honey or maple syrup, optional
- 2–4 tablespoons milk, as needed
- 1 tablespoon butter or cooking oil, for the pan

- 2 tablespoons mini chocolate chips

Instructions
- Blend the oats.
Add the rolled oats to a blender and blend for about 20–30 seconds, until they become a fine oat flour. - Add the wet ingredients.
Add the cottage cheese, eggs, banana, vanilla, cinnamon, salt, and honey or maple syrup if using.Blend until the mixture is mostly smooth. A few tiny pieces of cottage cheese or oats are perfectly fine. - Add the baking powder.
Add the baking powder and pulse the blender a few times until just incorporated. - Check the batter.
Let the batter rest for 5 minutes. The oats will absorb some of the liquid and the batter will thicken.If it becomes too thick to pour easily, add milk 1 tablespoon at a time until you reach a thick but pourable pancake batter. - Heat the pan.
Place a nonstick skillet or griddle over medium-low to medium heat. Lightly grease it with butter or oil. - Cook the pancakes.
Pour approximately ¼ cup of batter onto the pan for each pancake.Cook for about 2–3 minutes, until bubbles appear on the surface and the edges look set. - Flip carefully.
Gently flip the pancakes and cook for another 1–2 minutes, until golden brown and cooked through.Because these pancakes are thicker and softer than traditional pancakes, flipping them gently helps keep them intact. - Repeat.
Continue with the remaining batter, adding a little more butter or oil to the pan as needed. - Serve.
Stack the pancakes and top with Greek yogurt, berries, nut butter, banana, or a drizzle of maple syrup.
Tips for the Best Pancakes
- Use cottage cheese with a creamy texture. Full-fat or low-fat cottage cheese both work.
- Blending the cottage cheese produces smoother pancakes. If you prefer texture, you can simply whisk the ingredients together instead.
- Keep the heat medium-low. High heat can brown the outside before the center cooks.
- Let the batter rest for a few minutes so the oats can absorb the liquid.
- Don’t make the pancakes too large—they’re easier to flip when they’re around 4 inches wide.
