Homemade Chocolate Peanut Butter Crunch Bars
These homemade chocolate peanut butter crunch bars are rich, crispy, chewy, and incredibly easy to make. They have a creamy peanut butter layer, plenty of crunchy cereal, and a smooth chocolate topping. Think of them as a cross between a peanut butter cup and a crispy cereal bar.
Ingredients
For the peanut butter crunch layer
- 1 cup (250 g) creamy peanut butter
- ½ cup (113 g) unsalted butter
- ½ cup (100 g) packed brown sugar
- ⅓ cup (110 g) honey or light corn syrup
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 3 cups (90 g) crispy rice cereal
- ½ cup (85 g) mini chocolate chips, optional
For the chocolate topping
- 1½ cups (255 g) semi-sweet or milk chocolate chips
- 2 tablespoons creamy peanut butter
- 1 teaspoon coconut oil or vegetable shortening, optional
Instructions
- Prepare the pan.
Line an 8×8-inch or 9×9-inch baking pan with parchment paper, leaving some overhang on two sides. Lightly grease the parchment so the bars are easy to remove later. - Make the peanut butter mixture.
Add the peanut butter, butter, brown sugar, and honey to a medium saucepan. Heat over low to medium-low heat, stirring frequently, until the butter has melted and everything is smooth and well combined.Don’t let the mixture boil vigorously. You just want it warm enough for the ingredients to melt together.
- Add vanilla and salt.
Remove the saucepan from the heat and stir in the vanilla extract and salt. - Add the crispy cereal.
Place the crispy rice cereal in a large mixing bowl. Pour the warm peanut butter mixture over it and gently fold until all of the cereal is coated.Stir carefully so you don’t crush the cereal—you want plenty of crunchy pieces throughout the bars.
- Add chocolate chips.
If using mini chocolate chips, allow the mixture to cool for a minute or two before folding them in. This prevents them from completely melting. - Press into the pan.
Transfer the mixture to the prepared pan. Use a spatula, the bottom of a measuring cup, or lightly greased parchment paper to press it firmly and evenly into the pan.Pressing firmly is important because it helps the bars hold together when sliced.
- Make the chocolate topping.
Add the chocolate chips and 2 tablespoons of peanut butter to a microwave-safe bowl. Microwave in 20–30 second intervals, stirring thoroughly after each interval, until smooth.If desired, stir in the coconut oil for a thinner, smoother chocolate layer.
- Spread the chocolate over the bars.
Pour the melted chocolate mixture over the peanut butter crunch layer. Spread it evenly with a spatula. - Chill.
Refrigerate the bars for at least 1–2 hours, or until the chocolate is completely set and the base is firm. - Slice and serve.
Lift the chilled slab from the pan using the parchment paper. Let it sit at room temperature for about 5–10 minutes, then cut into squares or bars with a sharp knife.
Tips for the Best Crunch Bars
- Don’t crush the cereal. Gently fold everything together to preserve the crunch.
- Use creamy peanut butter for the smoothest texture. Natural peanut butter can work, but make sure it’s very well stirred.
- Press firmly: This keeps the bars from crumbling when you cut them.
- Don’t overheat the chocolate: Gentle melting prevents it from becoming thick or grainy.
- Add flaky salt: A tiny sprinkle over the chocolate topping gives these bars an amazing sweet-and-salty flavor.
- Make them extra peanut-buttery: Drizzle melted peanut butter over the chocolate before it sets, then swirl it with a toothpick.
- Want more crunch? Add ½ cup chopped roasted peanuts to the cereal mixture.

Storage
