These baked chicken thighs are juicy and tender with beautifully caramelized edges and a sticky sweet-and-savory glaze. Honey, soy sauce, garlic, Dijon mustard, and a touch of vinegar create a balanced sauce that’s perfect with rice, roasted vegetables, or mashed potatoes.
Ingredients

- 6 bone-in, skin-on chicken thighs, about 2½–3 lb (1.1–1.4 kg)
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
Sweet & Savory Glaze
- ⅓ cup honey
- ¼ cup low-sodium soy sauce
- 2 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp grated fresh ginger
- ½ tsp smoked paprika
- ¼ tsp red pepper flakes, optional
- 1 tbsp fresh lemon juice

Instructions
1. Prepare the chicken
Pat the chicken thighs thoroughly dry with paper towels.
This is particularly important if you want nicely browned skin.
Place them in a large baking dish or bowl.
Drizzle with olive oil.
Sprinkle with paprika, garlic powder, onion powder, salt, and black pepper.
Rub the seasoning evenly over both sides.
2. Make the glaze
In a bowl, whisk together the honey, soy sauce, Dijon mustard, apple cider vinegar, olive oil, garlic, ginger, smoked paprika, red pepper flakes, and lemon juice.
Reserve about ⅓ of the glaze in a separate bowl for finishing.
Don’t use the same portion that has touched raw chicken.
Optional Marinating
3. Marinate the chicken
Pour approximately two-thirds of the glaze over the chicken.
Turn the thighs several times to coat them thoroughly.
Cover and refrigerate for 30 minutes, or up to 4 hours.
For convenience, you can skip the marinating step entirely—the glaze will still provide plenty of flavor.
Bake the Chicken
4. Preheat the oven
Preheat the oven to 400°F (200°C).
Arrange the chicken thighs skin-side up in a baking dish or on a parchment-lined baking sheet.
Leave a little space between each piece.
5. Begin baking
Bake for approximately 25 minutes.
Remove the chicken from the oven and brush generously with the reserved fresh glaze.
6. Continue baking
Return the chicken to the oven.
Bake for another 10–15 minutes, or until the chicken is deeply browned and reaches an internal temperature of at least 165°F (74°C) in the thickest part.
For the most tender thighs, cooking them to around 175–185°F (80–85°C) is often ideal.
7. Caramelize the glaze
For an especially sticky, caramelized finish, switch the oven to broil for the final 1–2 minutes.
Watch closely because the honey can burn quickly.
Rest and Serve
8. Rest
Remove the chicken from the oven and let it rest for 5–10 minutes.
This allows the juices to redistribute while the glaze thickens slightly.
9. Garnish
Sprinkle with sesame seeds and sliced green onions.
Add fresh parsley or sliced chili if desired.
Serve with lemon wedges.
Boneless Chicken Thigh Version
Use 2 lb (900 g) boneless, skinless chicken thighs.
Bake at 400°F (200°C) for approximately 20–25 minutes, depending on thickness.
Brush with additional glaze during the final 5–10 minutes.
Always check the internal temperature rather than relying solely on cooking time.
Spicy Honey Chicken Thighs
Increase the red pepper flakes to ½–1 teaspoon.
You can also add:
- 1 tbsp sriracha
- 1 tsp chili garlic sauce
- ½ tsp cayenne
The spicy glaze pairs particularly well with cool cucumber salad or steamed rice.
Orange-Honey Glaze
Replace the lemon juice with 2 tbsp fresh orange juice.
Add 1 tsp finely grated orange zest.
The orange gives the glaze a bright, slightly sweeter flavor.
Maple Garlic Version
Replace the honey with an equal amount of pure maple syrup.
Add an extra ½ teaspoon smoked paprika for a deeper, smoky flavor.
Vegetable Sheet-Pan Dinner
Add vegetables around the chicken during the last 20–25 minutes of cooking.
Good choices include:

Toss the vegetables with olive oil, salt, and pepper before adding them to the pan.
Don’t pour raw-chicken marinade over the vegetables.
