500 g fresh beets

1 cup white vinegar (5% acidity)

2–3 tablespoons sugar

½ teaspoon black peppercorns (optional)

Instructions
1. Wash the beets
Scrub the beets thoroughly. Leave a little stem attached to help prevent color loss while cooking.
2. Cook and slice
Boil for 30–45 minutes, or until tender. Cool, peel, and slice into rounds or cubes.
3. Prepare the brine
Heat the vinegar, water, sugar, and salt until dissolved. Add peppercorns or cinnamon if desired.
4. Fill and refrigerate
Place the sliced beets in a clean glass jar. Pour the brine over them until covered. Cool promptly, seal, and refrigerate.
