These easy No-Bake Chocolate Peanut Butter Oatmeal Bars are chewy, chocolatey, and made with simple pantry ingredients—no oven required!
Ingredients
- 2 cups old-fashioned rolled oats
- 1 cup creamy peanut butter
- ½ cup honey or maple syrup
- ⅓ cup unsweetened cocoa powder
- ½ cup chocolate chips
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 2–4 tablespoons milk, as needed
Instructions
- Prepare the pan: Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
- Combine the wet ingredients: In a saucepan over low heat, warm the peanut butter and honey until smooth and well combined.
- Add chocolate: Stir in the cocoa powder, chocolate chips, vanilla, and salt. Continue stirring until the chocolate melts and the mixture becomes smooth.
- Add oats: Remove from the heat and stir in the rolled oats. If the mixture seems too dry, add milk 1 tablespoon at a time.
- Press into the pan: Transfer the mixture to the prepared pan and firmly press it into an even layer.
- Chill: Refrigerate for at least 2 hours, or until the bars are firm.
- Slice and serve: Lift the bars out using the parchment paper and cut into squares.
Storage
Store the bars in an airtight container in the refrigerator for up to 1 week. They can also be frozen for longer storage.
Tip: For extra crunch, mix in chopped peanuts, almonds, or shredded coconut before pressing the mixture into the pan.
