Teriyaki Chicken and Pineapple Foil Packets

These Teriyaki Chicken and Pineapple Foil Packets are an easy, flavorful dinner with juicy chicken, sweet pineapple, colorful vegetables, and a glossy homemade teriyaki sauce. Everything cooks together inside individual foil packets, keeping the chicken moist while the pineapple juices mingle with the savory-sweet sauce.
They’re especially convenient for busy weeknights, outdoor cooking, or summer dinners when you want minimal cleanup.
Ingredients
For the chicken and vegetables
- 1½ lb (680 g) boneless, skinless chicken breasts or thighs
- 2 cups fresh pineapple chunks
- 1 red bell pepper, cut into bite-sized pieces
- 1 yellow bell pepper, cut into bite-sized pieces
- 1 small zucchini, sliced into half-moons
- 1 small red onion, cut into chunks
- 2 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp ground ginger
- 2 green onions, sliced
- 1 tbsp sesame seeds, for garnish
For the homemade teriyaki sauce
- ½ cup (120 ml) low-sodium soy sauce
- ¼ cup (60 ml) pineapple juice
- 2 tbsp honey
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 cloves garlic, finely minced
- 1 tsp freshly grated ginger
- 1 tbsp cornstarch
- 2 tbsp cold water
For serving
- Cooked white or brown rice
- Extra pineapple chunks
- Sliced green onions
- Sesame seeds
- Lime wedges, optional
- Sriracha or chili sauce, optional
Instructions
1. Prepare the chicken
Pat the chicken dry with paper towels.
Cut the chicken into fairly even pieces, approximately 1½-inch chunks.
Keeping the pieces similar in size is important because it allows them to cook at roughly the same rate.
Chicken thighs are particularly good for foil packets because they remain juicy and flavorful even if they cook slightly longer than expected. Chicken breast works beautifully as well but should not be overcooked.
Place the chicken in a large bowl.
Add the olive oil, salt, black pepper, garlic powder, and ground ginger.
Toss until evenly coated.
Set aside while you prepare the sauce and vegetables.
2. Make the teriyaki sauce
In a small saucepan, combine:
- Soy sauce
- Pineapple juice
- Honey
- Brown sugar
- Rice vinegar
- Sesame oil
- Garlic
- Fresh ginger
Whisk everything together.
Place the saucepan over medium heat and bring the mixture to a gentle simmer.
In a small bowl, mix the cornstarch with the cold water until completely smooth.
Slowly whisk the cornstarch mixture into the simmering sauce.
Cook for approximately 1–2 minutes, stirring constantly, until the sauce thickens and becomes glossy.
Remove from the heat.
The sauce should be thick enough to coat the back of a spoon but still pourable.
Allow it to cool for a few minutes.
3. Prepare the vegetables
Cut the bell peppers, zucchini, and red onion into pieces roughly similar in size to the chicken.
Place them in a large bowl.
Add the pineapple chunks.
Fresh pineapple gives the best flavor, but canned pineapple can absolutely be used. If using canned pineapple, drain it thoroughly and reserve some of the juice for the sauce.
4. Preheat the oven
Preheat your oven to 425°F (220°C).
You’ll need four large sheets of heavy-duty aluminum foil.
For easier handling, you can place each sheet of foil on top of a sheet of parchment paper.
The parchment is optional but helps prevent the sauce from sticking directly to the foil.
5. Assemble the packets
Lay four large sheets of foil on your work surface.
Divide the chicken evenly between the four pieces of foil.
Arrange the pineapple and vegetables around the chicken.
Drizzle approximately 2–3 tablespoons of teriyaki sauce over each packet.
Toss the ingredients gently with your hands or a spoon to coat them.
Don’t add every bit of sauce at this point. Save some for serving.
6. Seal the packets
Bring the two long sides of the foil together over the food.
Fold them down several times to create a tight seal.
Then fold the short ends inward.
You want each packet securely sealed so that steam stays inside.
However, don’t wrap the packets so tightly that the ingredients are completely compressed. Leave a little room inside for steam to circulate.
7. Bake
Place the foil packets on a large baking sheet.
Transfer them to the preheated oven.
Bake for approximately 25–30 minutes.
The exact cooking time depends on the size of your chicken pieces.
The chicken is safely cooked when the thickest piece reaches 165°F (74°C).
If you’re using larger chunks of chicken, they may require a few additional minutes.
8. Carefully open the packets
Remove the packets from the oven.
Allow them to sit for about 5 minutes.
Be very careful when opening them.
The packets will contain extremely hot steam, which can cause burns.
Open the packets away from your face and hands.
9. Add the finishing sauce
Drizzle the remaining teriyaki sauce over the chicken and vegetables.
Sprinkle with sliced green onions and sesame seeds.
For a little heat, add a small drizzle of sriracha or your favorite chili sauce.
A squeeze of fresh lime juice is also excellent and helps balance the sweetness of the teriyaki and pineapple.
How to Serve
These packets are excellent served directly over rice.
Spoon the chicken, pineapple, and vegetables over:
- Steamed white rice
- Jasmine rice
- Brown rice
- Coconut rice
- Cauliflower rice
- Quinoa
For a complete tropical-inspired dinner, serve with a simple cucumber salad or steamed edamame.
Tips for Perfect Foil Packets
Cut the chicken evenly
The most important thing is consistency.
If some chicken pieces are tiny and others are very large, the small pieces can become overcooked while you’re waiting for the larger pieces to finish.
Aim for pieces around 1½ inches.
Don’t use too much sauce before baking
It can be tempting to pour all of the teriyaki sauce over the packets.
Don’t.
The pineapple and vegetables will release some moisture as they cook, so adding too much sauce can make the packets watery.
Using some sauce during cooking and saving the rest for finishing gives you a much better consistency.
Use heavy-duty foil
Regular foil can tear more easily when you’re assembling and moving the packets.
If you only have regular foil, use two layers.
Don’t skip the baking sheet
Even if the packets are tightly sealed, placing them on a baking sheet makes them much easier to transfer into and out of the oven.
It also catches any sauce that happens to leak.
Grilled Version
These foil packets are fantastic on the grill.
Preheat your grill to approximately 400–425°F (200–220°C).
Place the sealed packets directly on the grill grates.
Cook for approximately 20–25 minutes, turning the packets once halfway through if desired.
Check the chicken with an instant-read thermometer to ensure it reaches 165°F (74°C).
For a little extra caramelization, carefully open the packets during the final few minutes and let the ingredients cook uncovered.
Be extremely careful when opening them because hot steam will escape.
Vegetable Variations
You can easily customize the packets depending on what you have available.
Good additions include:
- Broccoli florets
- Sugar snap peas
- Mushrooms
- Carrots
- Snow peas
- Baby corn
- Asparagus
- Green bell peppers
If using dense vegetables such as carrots, cut them fairly thin so they have enough time to cook.
Spicy Teriyaki Version
For a sweet-and-spicy version, add one or more of the following to the sauce:
- 1 tsp sriracha
- ½ tsp crushed red pepper flakes
- 1 tsp chili garlic sauce
- ½ tsp cayenne pepper

Replace ¼ cup of the pineapple juice with ¼ cup coconut milk.
