This comforting one-pot meal requires minimal preparation. Tender chicken, creamy potatoes, carrots, and savory herbs cook together in a flavorful broth.
Ingredients

1½–2 lb (700–900 g) boneless, skinless chicken thighs or breasts

1½ lb (700 g) baby potatoes, halved

3 carrots, cut into chunks

1 small onion, sliced

3 cloves garlic, minced

1½ cups (360 ml) chicken broth

1 teaspoon dried thyme
-
1 teaspoon dried parsley
-
½ teaspoon paprika
-
½ teaspoon black pepper

1 teaspoon salt, or to taste

2 tablespoons olive oil

1 tablespoon cornstarch + 2 tablespoons water, optional for thickening

Fresh parsley, for garnish
Instructions
1. Prepare the Slow Cooker
Lightly grease the slow-cooker insert.
Place the potatoes, carrots, and onion on the bottom.
2. Season the Chicken
Pat the chicken dry and season both sides with salt, pepper, paprika, thyme, and parsley.
Place the chicken over the vegetables.
3. Add the Broth
Scatter the garlic over everything, then pour the chicken broth around the chicken.
Drizzle the olive oil over the top.
4. Cook
Cover and cook:

LOW: 5–6 hours

HIGH: 2½–3½ hours
Cook until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender.
5. Thicken the Sauce — Optional
For thicker gravy, remove the cooked chicken and vegetables.
Mix the cornstarch with cold water, stir it into the cooking liquid, and cook on HIGH for about 10–15 minutes, until thickened.
6. Serve
Return the chicken to the slow cooker or place everything on a serving platter.
Spoon the flavorful sauce over the chicken and potatoes and garnish with fresh parsley.
