Protein Blueberry Cream Cheese Loaf

🛒 Ingredients
Blueberry loaf
- 1½ cups (180 g) all-purpose flour
- 1 scoop (25–30 g) vanilla protein powder
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 2 large eggs
- ½ cup (100 g) Greek yogurt
- ¼ cup (60 ml) milk
- ¼ cup (50 g) honey or maple syrup
- 2 tbsp melted butter or neutral oil
- 1 tsp vanilla extract
- 1 tsp lemon zest
- 1 cup (150 g) fresh or frozen blueberries
Cream cheese layer
- 6 oz (170 g) light cream cheese, softened
- ¼ cup (60 g) Greek yogurt
- 2 tbsp powdered sugar or sweetener
- ½ tsp vanilla extract
- 1 tsp lemon juice
- 1 tbsp vanilla protein powder
Optional topping
- ¼ cup blueberries
- 1 tbsp sliced almonds
- Light dusting of powdered sugar
👩🍳 Instructions
1. Prepare the oven
Preheat your oven to 350°F (175°C).
Line an 8 × 4-inch (20 × 10 cm) loaf pan with parchment paper, leaving some overhang on the sides.
Lightly grease the parchment.
2. Prepare the dry ingredients
In a medium bowl, whisk together:
- Flour
- Protein powder
- Baking powder
- Baking soda
- Salt
Mix well so the protein powder and leavening agents are evenly distributed.
3. Mix the wet ingredients
In a large bowl, whisk together the eggs, Greek yogurt, milk, honey, melted butter, vanilla, and lemon zest.
Whisk until smooth.
4. Make the loaf batter
Add the dry ingredients to the wet mixture.
Gently stir until just combined.
Don’t overmix. Protein powder can make baked goods dense if the batter is worked too much.
5. Add the blueberries
If using fresh blueberries, gently fold them into the batter.
If using frozen blueberries, don’t thaw them first. Fold them in while frozen to help prevent excessive purple streaking.
Set the batter aside.
🧀 Make the Cream Cheese Filling
6. Mix the filling
In a separate bowl, beat the softened cream cheese until smooth.
Add the Greek yogurt, powdered sugar, vanilla, lemon juice, and protein powder.
Mix until creamy and completely smooth.
If the mixture seems very thick, add 1 teaspoon of milk at a time until it’s spreadable.
🍞 Assemble the Loaf
7. Add the first layer
Spread approximately half of the blueberry batter into the prepared loaf pan.
Smooth it gently with a spatula.
8. Add the cream cheese
Spoon the cream cheese mixture over the batter.
Carefully spread it into an even layer, leaving about ½ inch around the edges.
9. Add the remaining batter
Spoon the remaining blueberry batter over the cream cheese layer.
Gently spread it out so the filling is completely covered.
Don’t press too hard or you’ll mix the layers together.
10. Add extra blueberries
Scatter a few additional blueberries over the top.
You can also add sliced almonds if desired.
🔥 Bake
11. Bake the loaf
Place the pan in the center of the preheated oven.
Bake for 45–55 minutes.
Start checking around 45 minutes.
The loaf is ready when:
- The top is golden.
- The center feels set.
- A toothpick inserted into the cake portion comes out mostly clean.
Avoid inserting the toothpick directly into the cream cheese layer because it will naturally remain moist.
If the top begins browning too quickly, loosely cover the loaf with foil for the final 10–15 minutes.
12. Cool completely
Allow the loaf to cool in the pan for 15–20 minutes.
Then lift it out using the parchment paper.
Because it contains a cream cheese layer, let it cool completely and then refrigerate for at least 1 hour before slicing.
For the cleanest slices, refrigerate it overnight.
🫐 Optional Lemon Glaze
For an extra dessert-like finish, combine:
- ½ cup powdered sugar
- 1–2 tsp fresh lemon juice
- 1 tsp milk
Stir until smooth and drizzle lightly over the completely cooled loaf.
⭐ Tips for a Moist Protein Loaf
- Don’t use too much protein powder. More isn’t always better; excess protein powder can make the loaf dry and rubbery.
- Greek yogurt provides moisture while adding protein.
- Use room-temperature cream cheese for a smooth filling.
- Don’t overmix after adding the flour.
- Frozen blueberries work beautifully—add them straight from the freezer.
- Let the loaf cool completely before cutting so the cream cheese layer can firm up.
🧊 Storage
Because of the cream cheese filling, store the loaf covered in the refrigerator.
It will keep well for approximately 3–4 days.
You can also freeze individual slices. Wrap them tightly and freeze for up to 2 months. Thaw overnight in the refrigerator.
