-
1 tablespoon sour cream or yogurt
-
1 small green chile, finely chopped
-
½ teaspoon lime juice

Pinch of garlic powder
Instructions
1. Roast the Chiles
Place the green chiles under a hot grill/broiler or over a flame and turn them until the skins become blistered and charred.
Put them in a covered bowl for about 10 minutes. Peel off the loose skin, remove the stems and seeds if desired, and chop.
2. Cook the Onions
Heat butter or oil in a skillet over medium heat. Add the sliced onion and cook for about 8–10 minutes, stirring occasionally, until soft and lightly caramelized.
Add the garlic and chopped roasted chiles. Cook for another 1–2 minutes and season with a little salt.
3. Make the Patties
Divide the ground beef into four portions and gently form them into patties. Season both sides with salt, pepper, garlic powder, and onion powder.
Avoid overworking the meat so the burgers stay tender.
4. Cook the Burgers
Heat a skillet or grill over medium-high heat. Cook the patties until browned and cooked to your preferred level of doneness, following appropriate food-safety guidance for ground beef.
Place a slice of cheese on each patty near the end of cooking and allow it to melt.
5. Toast the Buns
Lightly butter the cut sides of the buns and toast them in the skillet until golden.
6. Assemble
Spread the optional sauce over the buns. Add the cheesy beef patty, followed by a seasoning. For more heat, leave some chile generous spoonful of the roasted green chile and onion mixture.
Top with the other half of the bun and serve immediately.
Extra Flavor
For an especially smoky burger, add smoked paprika to the beef seasoning. For more heat, leave some chile seeds in or add sliced fresh jalapeño.
Serve with crispy fries, potato wedges, coleslaw, or a simple green salad.
