The Secret to Extra-Crispy Bacon 🥓
The biggest trick is simple: start bacon in a cold pan and cook it slowly. This lets the fat render gradually, while the bacon crisps evenly instead of burning before the fat has rendered.
The method
-
Use a cold, heavy skillet. Lay the bacon strips flat without overlapping.
-
Turn the heat to medium-low. Let the bacon slowly release its fat.
-
Flip occasionally. This helps both sides brown evenly.
-
Cook until deeply golden and crisp. Don’t rely only on the pan time—thicker bacon takes longer.
-
Drain on a wire rack set over a baking sheet rather than directly on paper towels. Air can circulate underneath, helping the crust stay crisp.
-
Let it rest for 1–2 minutes. Bacon firms up as it cools.
For maximum crunch
For a large batch, the oven method is excellent: arrange bacon in a single layer on a rimmed baking sheet and bake at about 200°C / 400°F until browned and crisp, usually around 15–25 minutes, depending on thickness and your preferred doneness.
Bonus secret: Don’t overcrowd the pan. Bacon needs room for the rendered fat to circulate and for moisture to escape.
The result: deeply browned, shatteringly crisp edges with a flavorful, slightly chewy center.
