šŸŒ¶ļøšŸ² Hearty Stuffed Pepper Soup

ThisĀ stuffed pepper soupĀ has all the comforting flavors of classic stuffed peppers without the extra work of stuffing and baking individual peppers. It’s hearty, savory, slightly sweet from the peppers, and perfect with crusty bread on a cold evening.Servings:Ā 6
Prep time:Ā 15 minutes
Cook time:Ā 35–40 minutes
Total time:Ā About 55 minutes

Ingredients

For the soup

  • 1 lb (450 g)Ā ground beef
  • 1 tbspĀ olive oil, if needed
  • 1 mediumĀ yellow onion, diced
  • 3 clovesĀ garlic, minced
  • 2Ā bell peppers, diced
  • 1 can (14.5 oz / 410 g)Ā diced tomatoes, with juices
  • 1 can (15 oz / 425 g)Ā tomato sauce
  • 4 cups (960 ml)Ā beef broth
  • 1 tbspĀ tomato paste
  • 1 cupĀ cooked white or brown rice
  • 1½ tspĀ Italian seasoning
  • 1 tspĀ paprika
  • ½ tspĀ smoked paprikaĀ (optional)
  • ½ tspĀ salt, plus more to taste
  • ¼ tspĀ black pepper
  • 1 tspĀ Worcestershire sauceĀ (optional)
  • 1 tspĀ brown sugarĀ (optional, to balance the tomatoes)
  • 2 tbspĀ fresh parsley, chopped

For serving

  • Shredded mozzarella
  • Shredded cheddar
  • Fresh parsley
  • Crusty bread or garlic bread

Instructions

1. Brown the beef

Place a large heavy-bottomed pot or Dutch oven overĀ medium-high heat.

Add the ground beef and cook for aboutĀ 5–7 minutes, breaking it apart with a wooden spoon.

Continue cooking until the beef is browned and no longer pink.

If there is a large amount of excess fat, carefully drain some of it.

2. Cook the onion and peppers

Add the diced onion and bell peppers to the pot.

Cook for aboutĀ 5–6 minutes, stirring occasionally, until the vegetables begin to soften.

The peppers don’t need to be completely tender yet because they’ll continue cooking in the soup.

3. Add the garlic

Stir in the minced garlic.

Cook for aboutĀ 30–60 seconds, just until fragrant.

Don’t cook the garlic too long or it can become bitter.

4. Add the tomato paste and seasonings

Stir in:

  • Tomato paste
  • Italian seasoning
  • Paprika
  • Smoked paprika
  • Salt
  • Black pepper

Cook for approximatelyĀ 1 minute.

This brief cooking time helps develop the flavor of the tomato paste and spices.

5. Add the tomatoes and broth

Pour in the diced tomatoes and tomato sauce.

Add the beef broth and Worcestershire sauce if using.

Stir everything together, scraping the bottom of the pot to loosen any browned bits.

Those browned bits add a lot of flavor.

6. Simmer the soup

Bring the soup to a gentle boil.

Once it starts bubbling, reduce the heat toĀ medium-low.

Cover partially and simmer for aboutĀ 20–25 minutes.

Stir occasionally.

The peppers should become tender and the flavors should have time to blend.

7. Add the rice

Stir inĀ 1 cup of cooked rice.

Simmer for anotherĀ 5 minutes.

Using already-cooked rice is important because uncooked rice can absorb a large amount of broth and make the soup too thick.

If the soup becomes thicker than you’d like, add another ½–1 cup of beef broth.

8. Taste and adjust

Taste the soup carefully.

Adjust with additional:

  • Salt
  • Black pepper
  • Italian seasoning
  • Worcestershire sauce

If the tomatoes taste particularly acidic, add ½–1 teaspoon brown sugar.

Don’t make it sweet—the sugar is simply there to balance the acidity.

9. Finish with parsley

Turn off the heat and stir in the chopped fresh parsley.

Let the soup stand for aboutĀ 5 minutesĀ before serving.

šŸ§€ Serving

Ladle the hot soup into bowls.

Top each serving with a generous handful of shredded mozzarella or cheddar.

The cheese will melt into the hot soup and give it that classic stuffed-pepper flavor.

Finish with fresh parsley and a little freshly cracked black pepper.

Serve alongsideĀ crusty bread or garlic breadĀ for dipping.

⭐ Tips for the Best Stuffed Pepper Soup

Use different colored peppers

A combination of red, yellow, and green bell peppers gives you a more interesting flavor and makes the soup look beautiful.

Don’t overcook the peppers

You want them tender but still slightly substantial. Cooking them too long can make them disappear into the soup.

Use cooked rice

Add cooked rice toward the end. This keeps the soup brothy rather than turning it into a thick rice stew.

Make it thicker

If you prefer a more stew-like consistency, use 1½ cups cooked rice instead of 1 cup.

Make it spicier

Add:

  • ½ tsp red pepper flakes
  • 1 diced jalapeƱo
  • A pinch of cayenne

šŸš Variations

Turkey Stuffed Pepper Soup

Replace the ground beef with ground turkey. Add an extra tablespoon of olive oil for richness if needed.

Italian Sausage Version

Use half ground beef and half Italian sausage for a richer, more savory soup.

Low-Carb Version

Skip the rice and add extra bell peppers, cauliflower rice, or chopped zucchini.

Cheesy Stuffed Pepper Soup

Stir ½ cup shredded cheddar directly into the finished soup, then add more cheese on top.

Slow Cooker Version

Brown the beef first, then add everything except the cooked rice and cheese to a slow cooker.

Cook on:

  • LOW:Ā 6–7 hours
  • HIGH:Ā 3–4 hours

Stir in the cooked rice during the finalĀ 20–30 minutes.

🧊 Storage

Let leftovers cool before refrigerating.

Store in an airtight container forĀ 3–4 days.

The rice will absorb some broth as it sits, so when reheating, add a splash of beef broth or water to loosen the soup.

You can also freeze the soup for aboutĀ 2–3 months. For the best texture, freeze the soupĀ without the riceĀ and add freshly cooked rice when reheating.

šŸŒ¶ļø My favorite finishing touch

Add a littleĀ shredded cheddar + mozzarella, fresh parsley, and a few drops of hot sauce right before serving. It turns this simple soup into a seriously comforting, cheesy bowl of stuffed-pepper goodness.
