Marinated Cucumber and Tomato Salad

Ingredients

  • 2 large cucumbers, thinly sliced
  • 3 medium tomatoes, chopped
  • ½ small red onion, thinly sliced
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar or white vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon honey or sugar, optional
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano
  • 1 small garlic clove, finely minced

Instructions

  1. Prepare the vegetables: Wash the cucumbers and tomatoes well. Slice the cucumbers and chop the tomatoes into bite-sized pieces. Thinly slice the red onion.
  2. Make the marinade: In a small bowl, whisk together the olive oil, vinegar, lemon juice, honey or sugar if using, salt, black pepper, oregano, and minced garlic.
  3. Combine: Place the cucumbers, tomatoes, onion, and parsley in a large bowl. Pour the marinade over the vegetables.
  4. Toss gently: Mix everything carefully until the vegetables are evenly coated without crushing the tomatoes.
  5. Marinate: Cover and refrigerate for at least 30 minutes. For a stronger flavor, let it marinate for 1–2 hours.
  6. Serve: Give the salad another gentle toss before serving. Taste and add a little more salt, pepper, lemon juice, or vinegar if needed.

Helpful Tips

For a crispier salad, remove some of the watery seeds from the tomatoes and avoid slicing the cucumbers too thinly. You can also add feta cheese, olives, fresh dill, or a little chopped bell pepper for extra flavor.

The salad is best served chilled and pairs especially well with grilled chicken, fish, roasted meats, or crusty bread.
