No-Bake Chocolate Fruit & Nut Oat Bars

Chewy, chocolatey, and packed with oats, dried fruit, and crunchy nuts, these easy no-bake bars make a great snack or quick breakfast. No oven required.Makes: 12–16 bars

Ingredients

Bar mixture

  • 2½ cups (225 g) old-fashioned rolled oats
  • ¾ cup (90 g) chopped walnuts
  • ½ cup (75 g) chopped almonds
  • ½ cup (75 g) dried cranberries
  • ½ cup (75 g) chopped dried apricots
  • ⅓ cup (30 g) unsweetened shredded coconut, optional
  • ½ cup (45 g) unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon

Chocolate binding mixture

  • ½ cup (120 g) creamy peanut butter or almond butter
  • ⅓ cup (115 g) honey or maple syrup
  • ¼ cup (60 g) coconut oil
  • ½ cup (85 g) dark chocolate chips
  • 1 teaspoon vanilla extract

Optional topping

  • ½ cup melted dark chocolate
  • 2 tablespoons chopped nuts
  • 2 tablespoons dried cranberries
  • Pinch of flaky sea salt

1. Prepare the pan

Line an 8 × 8-inch (20 × 20 cm) square pan with parchment paper.

Leave some parchment hanging over the sides so you can lift the bars out easily later.

2. Combine the dry ingredients

In a large bowl, mix together:

  • Rolled oats
  • Walnuts
  • Almonds
  • Dried cranberries
  • Dried apricots
  • Coconut
  • Cocoa powder
  • Salt
  • Cinnamon

Stir thoroughly so the cocoa coats the oats, fruit, and nuts evenly.

3. Make the chocolate binder

Place the peanut butter, honey or maple syrup, and coconut oil in a small saucepan.

Heat over low heat, stirring until smooth.

Don’t let the mixture boil.

Remove from the heat.

Add the dark chocolate chips.

Stir until the chocolate has completely melted.

Add the vanilla.

4. Combine

Pour the warm chocolate mixture over the oat mixture.

Stir thoroughly.

Every oat and piece of fruit should be coated.

If the mixture looks too dry, add another tablespoon of peanut butter or honey.

If it looks too wet, stir in a few extra oats.

5. Press into the pan

Transfer the mixture to the prepared pan.

Use the back of a spatula, the bottom of a glass, or another flat surface to press it down very firmly.

Pay particular attention to the corners.

Firm pressing is what keeps the bars from crumbling when cut.

6. Add the topping

If desired, drizzle or spread melted dark chocolate over the top.

Sprinkle with chopped nuts, dried cranberries, and a tiny pinch of flaky sea salt.

7. Chill

Refrigerate for at least 2 hours.

For the firmest bars, chill overnight.

You can also freeze them for about 30–45 minutes if you want to speed up the process.

8. Cut

Lift the chilled slab from the pan using the parchment.

Place it on a cutting board.

Use a sharp knife to cut into 12–16 bars.

For cleaner cuts, wipe the knife between slices.

Chocolate Cherry Almond Bars

Replace the cranberries with dried cherries.

Use almond butter instead of peanut butter.

Add ½ teaspoon almond extract for a stronger almond flavor.

Dark chocolate and tart cherries make an excellent combination.

Peanut Butter Chocolate Bars

Use creamy peanut butter as the binder.

Add:

  • ½ cup mini chocolate chips
  • ¼ cup chopped peanuts

After chilling, drizzle with melted peanut butter mixed with a little melted chocolate.

Tropical Chocolate Fruit & Nut Bars

Use:

  • Dried mango
  • Dried pineapple
  • Cashews
  • Almonds
  • Coconut

Keep the cocoa and dark chocolate for a chocolate-tropical combination.

Chop the dried fruit relatively small so the bars hold together.

Higher-Protein Version

Add ½ cup protein powder to the dry mixture.

Chocolate or vanilla protein powder works well.

You may need an additional 2–3 tablespoons peanut butter or honey to compensate for the extra dry ingredients.

Lower-Sugar Version

Use unsweetened dried fruit where available and replace some of the honey with a baking-friendly sugar substitute.

Choose dark chocolate with a high cocoa percentage.

Keep in mind that dried fruit naturally contains concentrated sugars.

Storage

Store the bars in an airtight container in the refrigerator for up to 1 week.

Place parchment between layers if stacking them.

They can also be kept at room temperature for a day or two, but refrigeration gives them a firmer texture.

Freezing

Wrap individual bars in parchment or plastic wrap.

Place them in a freezer-safe container.

Freeze for up to 2 months.

Let them thaw in the refrigerator or at room temperature.

Best tip

The two keys to sturdy no-bake oat bars are enough binding mixture and very firm pressing. Don’t simply spread the mixture into the pan—really compress it so the oats, nuts, fruit, and chocolate form one solid slab.
