Ingredients

Pancake bites

  • 1 cup (225 g) cottage cheese
  • 2 large eggs
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup (125 g) all-purpose flour
  • ½ cup (50 g) oat flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup (120 ml) milk
  • 1 cup (150 g) fresh blueberries
  • 1 tablespoon melted butter or neutral oil

Optional

  • 1 teaspoon lemon zest
  • ½ cup vanilla Greek yogurt for serving
  • Maple syrup
  • Powdered sugar
  • Extra fresh blueberries

1. Prepare the cottage cheese

For completely smooth pancake bites, add the cottage cheese to a blender or food processor.

Blend for 20–30 seconds, until creamy.

If you don’t mind tiny pieces of cottage cheese, you can simply whisk it by hand.

Blending makes the finished pancake bites especially soft.

2. Mix the wet ingredients

In a large bowl, whisk together the blended cottage cheese, eggs, honey or maple syrup, vanilla, milk, and melted butter.

If using lemon zest, add it now.

Place a small spoonful of pancake batter into each muffin cup.

Add about ½ teaspoon cheesecake filling.

Cover with another small spoonful of batter.

Top with a blueberry.

High-Protein Version

For more protein, use:

  • 1½ cups cottage cheese
